Ms. Hoa said that her family really likes to eat boiled chicken. However, the chicken for offerings is quite large and cannot be finished, so she often "transforms" it into other dishes to make it more delicious and easier to eat.
Besides shredded chicken salad, she often makes mixed chicken pho. This is a favorite dish of her family and especially her children.
How to make mixed chicken pho
Ingredient:
- 1 boiled chicken, shredded or chopped
- 1kg rice noodles
- Onions to make fried onions
- Roasted peanuts
- Coriander, green onion, bean sprouts, garlic, chili
- Oyster sauce, soy sauce, sugar, chicken fat (or pork fat), fish sauce, chili sauce
Recipe for pho/vermicelli sauce :
- 1 tablespoon chicken fat or pork fat
- 2 tablespoons crab soy sauce or Chinsu sauce are both fine
- 1 spoon sugar
- 1/2 spoon fish sauce
- 1/2 tablespoon oyster sauce
- 1/2 spoon chili sauce
- 3 tablespoons chicken broth
Stir the above ingredients until dissolved, put in a pot, bring to a boil, then turn off the heat, wait for the sauce to cool down, then add minced garlic and chili and stir well (if you don't like spicy food, you can skip the chili).
Put the pho in a bowl, arrange the chicken on top, drizzle the sauce, sprinkle herbs, onions, and peanuts on top. When eating, mix well and enjoy.

How to dry chicken with lemon leaves
To make dried chicken with lemon leaves, you can use either the chicken breast from boiled chicken offerings or the raw chicken breast (as shown in the photo below). If it is the chicken breast from the chicken offerings, you can steam it again or not, as you like. The raw chicken breast must be steamed.
Ingredient:
- 1.5kg chicken breast
- Lemon leaves
- About 5 lemongrass stalks
- 1 onion
- Chili pepper
- Spices: Ground pepper, annatto oil, garlic powder, chili powder, turmeric powder, shrimp salt, sugar, five-spice powder, chili sauce.
Making:
- Steamed chicken: Line the pot or steamer with crushed lemongrass and onion wedges or halved onions to steam the chicken. After the chicken is cooked, let it cool down and shred it. For boiled chicken, also take the chicken breast (can be steamed again or not) and shred it into bite-sized pieces.
- Seasoning to marinate 1.5kg of chicken breast includes: 1 teaspoon of five-spice powder, 1 teaspoon of turmeric powder, 1 teaspoon of chili powder, 3 teaspoons of sugar, 1 teaspoon of shrimp salt, 1 teaspoon of garlic powder, 1 teaspoon of ground pepper, 1 teaspoon of chili sauce, 5 teaspoons of annatto color (rice spoon).
Mix all the above spices and put them in a large pan, turn on the stove and stir with the shredded chicken so that the spices are absorbed into the chicken and evenly colored, then add the washed and drained lemongrass leaves and sliced chili peppers.
- Set the temperature and drying time: If using an air fryer, set the temperature to 120 and leave for 15-20 minutes (after 15-20 minutes, open it and stir well).
According to Ms. Hoa, the time setting depends on the amount of chicken and the size of the pot. She usually sets it for about 15 minutes, if it is not dry, she can add another 5 minutes.
