Last year, the trend of salt coffee was everywhere. The variation in the way of preparing food and drinks has brought many interesting things. In Da Nang, recently, a unique fish sauce coffee appeared, attracting the attention of many people. The idea of combining coffee and fish sauce was created by Mr. Bui Thanh Phu (born in 1984), the owner of a fish sauce production facility in Nam O craft village (Lien Chieu district, Da Nang).
Mr. Phu said that from the fish sauce ice cream idea of some chefs and the "fever" of salted coffee, he and his colleagues began researching how to make fish sauce coffee.
“Many people are curious about whether fish sauce cafe is a mixture of coffee and fish sauce or adding fish sauce while roasting coffee like in the past to create a strong coffee flavor? Unlike what people imagine, we have condensed fish sauce similar to the way our grandparents used to make fish sauce. Traditional fish sauce is condensed at high temperature into fish sauce powder. This powder is sprinkled on the cream and coffee to create a cup of coffee with a harmonious flavor,” said Mr. Phu.
According to Mr. Phu, the fish sauce used to make fish sauce powder is traditional Nam O fish sauce with high protein content.
Talking about the idea of making fish sauce cafe, Mr. Phu said: “Our fish sauce production facility often welcomes tourists. It would be a bit strange to invite new visitors to try fish sauce right away, so I wanted to find a way to make something new from fish sauce so that visitors can have new experiences from drops of traditional fish sauce.”
After 3 months of testing, he recently introduced fish sauce coffee at festival programs of craft villages and the Department of Tourism. Surprisingly, both Vietnamese and foreign tourists enjoyed trying it and received positive feedback.
“When mixed with cream and coffee, fish sauce powder has a salty taste and a mild aroma. Moreover, the saltiness of fish sauce powder is not as astringent as salt. Fish sauce powder balances the astringent, bitter, and sour flavors of coffee, making the cup of coffee more harmonious, rich in flavor and with a better aftertaste,” said Mr. Phu.
As the creator of fish sauce coffee, Mr. Phu said he does not follow the "trend" but wants to develop this drink as a specialty of Da Nang.
Currently, he is providing fish sauce powder for some coffee shops and gradually completing the product and necessary procedures to soon bring this product to the market. He also plans to package fish sauce powder as Tet gifts as well as open a fish sauce cafe to serve tourists when they come to Nam O village.
“I hope that in the future, fish sauce coffee will become a specialty of Da Nang, just like tourists in Hanoi enjoy egg coffee. Especially when drinking fish sauce coffee, tourists will remember Nam O village, the first traditional fish sauce village in the country to be recognized as a national intangible cultural heritage,” said Mr. Phu.
