Because these types of water will produce nitrite - a substance that can cause cancer.
While the carcinogen nitrite can only be produced on the basis of nitrate. Meanwhile, the mineral water or purified water that we usually drink only contains minerals and trace elements or nothing at all. Since there is no nitrate, overnight water will not cause cancer as many people worry.

In addition, after many tests, experts discovered that although water was boiled continuously 20 times, it still contained nitrite, but the content was very low, only at 0.038 mg/L. This is not nitrite created by boiling many times but was already present in the water. It can be controlled by choosing the water to boil.
Thus, overnight boiled water and water boiled many times are not carcinogenic.
2 types of drinks that can cause cancer
Water too hot:
Many people have the habit of drinking hot water (including tea, soup...) because they think it is good for their health, especially the elderly who often use thermos to drink boiling water all day. However, the World Health Organization (WHO) has warned that drinking hot water above 65 degrees Celsius can increase the risk of esophageal and stomach cancer.
The reason is that when drinking water that is too hot, the lining of the esophagus and stomach will be strongly stimulated, causing burns and continuous damage. If this condition persists, it can change the cell structure, creating conditions for cancer cells to develop. The lining of the esophagus and stomach can only withstand temperatures of 40 - 50 degrees Celsius.

According to Associate Professor Fan Zhihong, tap water is disinfected with chlorine and may contain some chemical compounds such as chloroform and hydrogen halide - substances that can cause cancer. These compounds are formed when chlorine reacts with natural organic substances in the water.
If you drink tap water directly, without filtering and boiling it for a long time, these substances can accumulate in the body, increasing the risk of bladder, colon and kidney cancer. Some studies have shown that long-term exposure to chloroform can damage DNA, creating conditions for cancer cells to develop.
Some notes for drinking water more safely and healthily
Associate Professor Fan Zhihong also gave some notes on drinking water to ensure safety and better health such as:
- Water intake: Drink about 1.5-2 liters of water per day, adjusted according to weight and activity level.
- Temperature: Drinking warm water from 20-40 degrees Celsius is best, avoid water that is too hot or too cold.
- Time: You should actively drink water throughout the day. In particular, drinking a glass of water when waking up and before each meal is good for the heart and digestion.
- Drinking speed: Drink slowly, in small sips for better absorption by the body.
