Once having a stable job with a high income, but Mr. Truong Thanh Hien, Hoa Phat ward, Cam Le district (Da Nang city) quit his job and returned to his hometown to make bamboo tube sausage. Up to now, the bamboo tube sausage product has brought him billions of dong in revenue each year, creating many jobs.
Dare to think, dare to do
Sharing about his arduous journey of starting a business, Mr. Hien confided: "I used to be an accountant. After quitting my job in 2014, I started a business and all of them failed, even suffered heavy losses.

By the end of 2020, I happened to notice that neighboring localities had abundant shrimp resources, but their economic value had not been fully exploited. From there, I came up with the idea of making shrimp patties and have maintained the processing of various types of patties until now."
As an amateur who turned to the culinary industry, Mr. Hien encountered many difficulties in the early days of starting his business. To find a recipe for making shrimp patties that retained the traditional delicious taste, he had to throw away many batches of patties at a cost of tens of millions of dong.

According to Mr. Hien, making delicious sausage is not difficult, but making sausage that is both delicious, crispy and chewy, while ensuring clean standards, food safety, and affordable price is not easy. During the production process, the facility always focuses on choosing fresh ingredients with clear origins to ensure high quality finished products.
Currently, he imports fresh shrimp from shrimp farming areas of Thang Binh district (Quang Nam province), Phu Loc district (Hue city), pork and beef from Da Son slaughterhouse (Da Nang city) to serve production.

"After successfully researching the recipe for making sausage, I realized that my product was not different from many similar products on the market. So I tried putting the raw sausage mixture in bamboo tubes to steam instead of wrapping it in banana leaves. Surprisingly, this method not only helps to preserve the sweetness and nutrients of the meat, but also creates sausage products with new designs, impressing consumers. From there, products with the Cocimo bamboo tube sausage brand were born," Mr. Hien shared.
Revenue over 300 million VND/month
After completing the production process, Mr. Hien actively learned from experience to promote and introduce products through social networking sites such as Facebook, Zalo, TikTok.... With the motto of always putting quality first, absolutely not using borax or any toxic additives that affect human health, Cocimo bamboo tube sausage products are increasingly known and trusted by many customers.

Along with that, Mr. Hien invested in more machinery to build a modern production line system, improve product quality and ensure food hygiene and safety. Currently, his production facility has been granted a HACCP certificate.

Mr. Hien said: "In the process of making sausage, the bamboo tube preparation stage is the most important. I imported bamboo tubes from Kon Tum, then checked to remove worms and mold, then washed and boiled to remove bacteria. Next, put the raw sausage mixture into the bamboo tube, measure the quantity, wrap one end of the tube with aluminum foil and coconut string. The sausage contained in the bamboo tube when steamed will retain its natural flavor and the very characteristic bamboo aroma."

Currently, Mr. Hien produces a variety of bamboo tube sausages such as: shrimp sausages, squid sausages, beef sausages, pork sausages, Cau Mong veal sausages, sausages, sour shrimps.... On average, he produces more than 6 tons of products per month, supplying many provinces and cities across the country such as: Da Nang, Quang Nam, Ho Chi Minh City, Quang Ngai, Lam Dong.... Thanks to that, his company achieves a revenue of more than 300 million VND per month, creating jobs for 11 workers with a salary of 6.5-7 million VND/person/month.
In 2024, Cocimo bamboo tube pork sausage products were recognized by Cam Le District People's Committee as meeting 3-star OCOP standards. This has created a great opportunity for Cocimo sausage products to expand their market, participate in programs, fairs, and trade promotion events to introduce, promote, and connect product consumption.

Mr. Hien confided: "Starting a business with a new product made from shrimp and bamboo, I encountered countless difficulties and challenges. Although I have successfully started a business, I do not stop there but always actively learn and innovate to improve product quality, meet the increasing needs of consumers and promote the export of products under the Cocimo brand. At the same time, through that, I promote the typical beauty of Vietnamese culture and cuisine to international friends."
