A representative of the JW Marriott Hanoi Hotel said that this year, the unit produced 6,000 - 7,000 moon cakes with 13 different flavors, 6 types of fillings including: pandan, taro, black sesame, red bean, white lotus and green bean chia seeds, combined with salted eggs.
In recent times, the hotel has regularly upgraded its facilities and provided training on food safety and hygiene for its staff.
At the time of inspection, the assessment team found that the hotel regularly maintained food safety regulations as well as a clean and hygienic regime.
Through inspection, the hotel's bakery production area was clean, tidy and divided into separate zones; there were nameplates identifying each area.
In the moon cake making area, all equipment and tools are clean; samples are kept in accordance with regulations. Hotel staff are well aware of food safety issues and are fully equipped with hats, masks, and gloves.
However, the delegation suggested that the bakery area should have a sink for washing hands. The warehouse for storing baking ingredients is neatly arranged, but the hotel needs to upgrade and replace some shelves to ensure safety.
Along with that, hotels should fully and consistently label all food additives when extracting to prove their origin and expiration date.
In addition, the delegation also noted and instructed the hotel to regularly clean freezers and refrigerators to preserve food.
During the inspection, Head of the Hanoi Food Safety and Hygiene Department Dang Thanh Phong said that the delegation regularly inspects food safety at the JW Marriott Hotel Hanoi.
Through the inspection, the delegation highly appreciated the hotel for always maintaining food safety and hygiene. The facilities and bakery kitchen meet relatively good hygiene and food safety standards.
In particular, employees strictly comply with daily food sample storage according to regulations and requirements.
In addition, the hotel representative also provided full records and documents proving the origin of ingredients for moon cake production; 3-step verification records, etc. The hotel staff's health check-ups and periodic knowledge training were complete.
Implementing the direction of the Hanoi People's Committee on strengthening food safety for the Mid-Autumn Festival, the Hanoi Department of Food Safety and Hygiene has established two inspection teams at hotels in the city.
From now until the Mid-Autumn Festival, two inspection teams from the Hanoi Food Safety and Hygiene Department will strengthen food safety inspections of hotels of 3 stars or higher that produce and trade moon cakes; at the same time, they will take samples of cakes for quality testing.
