One night, while I was walking home late at night, I happened to see a grilled pork noodle shop that was still lit up. My stomach was growling, so I stopped by the shop to order a delicious meal and was surprised to learn that the shop had just opened at… 1am.

Since that time, every time I come home late or have a chance to pass by this road, I stop by to eat because I like the taste of grilled pork noodles at the restaurant as well as the cheerfulness and enthusiasm of the owner.
Asking around, I found out that this noodle shop was opened by Ms. Ngoc Phuong more than 20 years ago. Since it first opened, it has been open at dawn because, according to the owner, this is the time when the shop is… crowded with customers. Those are people who go out late at night, people who go to work early, especially at this time, need a place to eat. In total, she has been selling like this for 20 years and said she is used to this time frame.

Since the age of 10, Ms. Phuong has helped her family sell grilled pork noodles and has been attached to this dish until now, more than half of her life. She proudly shared that at the age of 88, her grandmother is still healthy, but no longer sells. Meanwhile, her mother and many other relatives in the family are still selling at many shops in Binh Tan District.
The owner also proudly said that thanks to this grilled pork noodle shop, she raised 4 children to be educated and grown up. Now, 3 of them are in college, the youngest is in 11th grade and is her great pride.

Ms. Phuong's grilled pork noodle shop has 3-4 sisters working together, each with a job as if they have been proficient for a long time. Although they are just assistants, they have been with her for more than ten years and consider each other as close family members.
The restaurant closes at 12 noon. What impressed me most when I arrived at the restaurant was how quickly the owner prepared the food. In less than 10 seconds, a complete bowl of grilled pork noodles was "out of the oven", which surprised me a bit.
The recipe for this dish was passed down to her by her grandmother and mother.
Ms. Phuong's noodle bowl, at first glance, is no different from the other restaurants I've been to. It's also noodles combined with grilled meat, spring rolls, grilled spring rolls, served with green vegetables, bean sprouts, and thinly sliced cucumber sprinkled with peanuts, and drizzled with the restaurant's signature sweet and sour dipping sauce.
However, when I ate it, the harmonious combination of ingredients made by the owner herself made me feel the difference unlike anywhere else I had ever eaten, especially the grilled spring rolls. Ms. Phuong said that it was also the dish she was most proud of in her dishes, with the family's traditional marinade.

"For more than a month now, the restaurant has moved to the opposite location. Just like that, every day, Ms. Phuong wakes up in the middle of the night, and with her family, sells the passionate grilled pork noodles.
