Sour soup and braised catfish mentioned by Le Tuan Khang are two typical Western dishes, with quite simple cooking methods.
First, prepare the catfish by blanching it in boiling water, adding a little salt, scraping off the slime, washing thoroughly, and cutting into small pieces.
For sour soup, you can use dried tamarind or lemon mixed with 1 liter of boiling water, add salt, a little sugar, chili and then cook the prepared fish until done.
Then add bean sprouts, tomatoes, pineapple, okra... then season again to taste and turn off the stove, finally sprinkle with basil leaves (or celery) for fragrance.

Catfish is also often cooked in a light braised dish. Clean the fish, cut into pieces, marinate with caramel, sugar, fish sauce, and salt.
Marinate the fish for about 30 minutes to let the spices soak in and start stewing over low heat for about 3 minutes until the fish is firm. Continue adding cold water (or fresh coconut water) and stew over high heat until boiling, add 2-3 fresh chili peppers.
Wait for it to boil for about 10 minutes, then season to taste, cook for another 10 minutes, then add green onions and turn off the heat.
