This fish and squid noodle shop is located on Ha Dac Street (Phuoc My Ward, Son Tra District, Da Nang), near Phuoc My Market. The shop looks very simple, with 7-8 plastic tables, but the price of each bowl of noodle here can be up to 150,000-200,000 VND.
The owner of the restaurant is Ms. Bui Thi Thuan, born in 1984. Ms. Thuan said that the noodle shop has only been in operation for about 3 years. Previously, she ran a drinking place, but due to the impact of the Covid epidemic, she switched to selling noodle soup.
She admits that her noodle shop is unique: "In Da Nang, there are many fish noodle shops, everyone is familiar with them, but the type of fish and squid noodle like mine is probably not available to anyone."
She did not hesitate to reveal that the restaurant's broth is made from fish and fish water. The seasoning only includes salt and a little seasoning powder.
“The broth is made from fresh sea fish, so it is very sweet, I don’t need to add much seasoning. We coastal people have a very simple way of cooking, the simpler it is, the more we can preserve the fresh taste of the fish and squid. Before opening for sale, I cooked it many times until the taste was just right, suitable for many people’s taste,” said Ms. Thuan.
With this simple cooking method, customers can easily detect whether the seafood is fresh or not, delicious or not. Therefore, for Ms. Thuan, the ingredients are the most important thing, the deciding factor to attract and retain customers.
“My family has a fishing boat. The boat comes back every morning, so I sell whatever fish I have. On days when there are few fish or squid, I buy more from familiar sources and choose carefully,” said Ms. Thuan.
Because it depends on fishing, the restaurant's menu is not fixed. In addition to the three main dishes of mackerel noodle soup, blue bone fish, and squid noodle soup priced at 25,000-50,000 VND/bowl, the restaurant also has other types of fish noodle soup such as betel nut fish, marble fish, star fish, mackerel... priced at around 150,000-200,000 VND/bowl.
Explaining that the noodle shop is popular but has expensive prices, more than restaurants, Ms. Thuan said that depending on the type of fish, the price of a bowl of noodle soup varies. The most expensive is the mackerel, priced from 350,000-500,000 VND/kg, and the betel nut fish, 300,000-350,000 VND/kg. She sells these types of fish whole, charging according to the weight of the fish, usually each fish costs from 2-4 taels.
“The bigger the fish, the more expensive it is, so it is normal for a bowl of noodles to cost several hundred thousand. Before making it, I always tell the customer the price, and only when they agree will I make it. Many customers come here to eat and become regulars. They even tell me the night before to save a big, delicious fish for them,” Ms. Thuan explained.
In addition, the fish soup is “worth every penny” because she does not use frozen fish. According to Ms. Thuan, squid can be frozen but fish cannot. Because frozen fish, when put into boiling water, will have its scales scratched and the skin will peel off immediately.
That is why, during the rainy season and rough seas, she accepts to sell only in the morning because there is not much fish and squid. On days when squid is cheap, she puts in 1.5 ounces of squid per bowl of noodle soup, and on days when it is more expensive, she puts in 1 ounce.
“At first, customers were also confused because one day the noodle soup had 5-6 squids, the next day there were only 4, for example, but I explained to them,” Ms. Thuan explained.
Ms. Thuan said that customers rated the restaurant's seafood as fresh and delicious and recommended it to their relatives and friends to try. In the summer, the noodle shop sells all day, and customers often have to wait in line for their turn. In the morning alone, the restaurant sells 7-8kg of squid and 20kg of fish.
Mr. Long (Thanh Khe district), a customer of the restaurant, shared that although his house is far away, he still visits the restaurant often. He is impressed by the fresh squid and fish. Especially the squid noodle soup. The restaurant keeps the ink bag intact, so it is very sweet when eaten, although the bowl of noodle soup may turn black. The price of 50,000 VND for a bowl of squid noodle soup is also reasonable. If you choose a whole fish, the price is expensive, you get what you pay for, so customers should ask before ordering to avoid being surprised.
