One of the "famous" specialties of Ha Tien that cannot be missed is ca xiu. Ca xiu can be harvested all year round but is most abundant from around June to August of the solar calendar.
Ca xiu is a mollusk with a green shell and soft, sweet meat. They often live buried under mud and appear a lot in Dong Ho lagoon, Ha Tien town.
In Ha Tien, ca xiu is processed into many other delicious dishes such as stir-fried ca xiu, ca xiu salad, ... of which the most famous is ca xiu fish sauce. Although this type of fish sauce is still strange to diners from all over, it has been attached to many generations of people here. The flavor of ca xiu fish sauce is said to be no less than other famous delicious fish sauces.
Bun Ken
Not only does it have a strange name, Bun Ken also impresses diners with its unique flavor, consisting of main ingredients of vermicelli and stuffing, and broth made from snakehead fish meat. That is also thanks to the meticulous and elaborate preparation process of the local people.
After being cleaned, the snakehead fish is boiled, the meat is removed and made into floss. The remaining part is stir-fried with typical spices such as onions, garlic, curry powder, cloves, star anise, cinnamon, and fish powder. Then, people put the stir-fried fish meat into the pot of fish broth, season to taste and add a little coconut milk to enhance the aroma.
A full bowl of Bun Ken includes noodles, broth, and some dried shrimp and crushed fish on top, served with herbs. When eating, diners add a little lemon, chili, fish sauce and mix all the ingredients well.
Mantis shrimp
Mantis shrimp (also known as mantis shrimp) is also one of the famous specialties of Ha Tien sea, usually caught around September and October. At this time, mantis shrimp is the most delicious and firm, with lots of eggs and roe, very delicious to eat.

Coming to Ha Tien, visitors can enjoy delicious dishes made from mantis shrimp at restaurants and eateries in the city center with prices ranging from 100,000 - 150,000 VND/dish.
In addition, many tourists also wake up early to go to the morning seafood market to personally choose and buy fresh, plump mantis shrimp that have just arrived on the boat. The price of fresh mantis shrimp ranges from 120,000 - 400,000 VND/kg, depending on the type and size.
Banh mi pha lau
Although it is a street food with affordable price, Banh Mi Pha Lau still attracts tourists when traveling to Ha Tien because of its unique flavor.
After being cleaned, the beef offal pieces are simmered with coconut milk, creating a characteristic sweet taste. This is also the difference of this cake compared to traditional breads served with meat, eggs, etc.
In Ha Tien, banh mi pha lau is often sold on the street or appears at sidewalk eateries,... with prices ranging from 15,000 - 20,000 VND/piece.
Red dried fish
Grilled dried red fish served with pickles has long been a familiar snack of Ha Tien people every afternoon and is gradually being sought out by many diners. This dish is sold a lot in the city center but visitors can find it at the restaurant on Tran Hau Street - a familiar address for food lovers who love red fish.
When there are customers, the owner starts grilling the tender red fish, soaked in spices, on the charcoal stove. When the fish is cooked and smells fragrant, take it out, cut it into small pieces and serve with pickles.
