Pho Phuong restaurant opens from 5:30 am to 8:30 pm every day.

“I heard that Michelin Vietnam awards restaurants in Saigon and Hanoi, so I went online to check. I was surprised to see my restaurant's name on it. Of course, I'm happy to receive an award. This is a great motivation for us to try harder and serve customers better and better," the owner said.

I think many of the Saigon pho restaurants on this list may be because they are more suitable to the taste of the reviewers. They have their own criteria so it is impossible to say. Everyone has different taste so it is impossible to say which restaurant is better than the other!

Ms. Phuong (57 years old) said she opened the restaurant when she was 18 years old. She lives "single and cheerful" and has been attached to this restaurant for the past several decades. The restaurant is the passion of her life.

Ms. Thanh Huyen (35 years old, living in Binh Thanh District) also visited the restaurant today. She said she is a regular customer of Pho Phuong restaurant. The day before, she accidentally found out that the restaurant had won a Michelin award, so today she arranged a schedule to visit with her family.

“I like the broth here the most, it has the sweet aftertaste of bone broth that suits the taste of Southern people. I have also tried Northern pho restaurants many times but it doesn't suit me. Of course, I can't say which restaurant is better than the other because it depends on each person's taste and regional differences. If the restaurant suits my taste and has good service, I will stick with it for a long time," the customer expressed his opinion.

Pho Phuong restaurant is popular with many diners.

Meanwhile, Ms. Hong Nhung (27 years old, living in District 1), a regular customer of Pho Hoa Pasteur (District 3), said she was not surprised that the restaurant was on Michelin's "golden list". She said that with the rich flavor of Pho that suits the taste of Vietnamese people, especially foreigners, along with professional and clean service, the restaurant deserves to be visited many times.

“Pho in Hanoi and Ho Chi Minh City have many differences”

Culinary artist Anh Tuyet, who has more than 50 years of experience in the kitchen, has a deep understanding of Vietnamese pho and was once given the responsibility of cooking for 21 heads of state at APEC 2017, also gave her opinions on the Michelin Guide's Bib Gourmand list of restaurants. Ms. Anh Tuyet also attended the "Announcement Ceremony of the first list of restaurants selected by Michelin Guide in Hanoi and Ho Chi Minh City" on June 6.

The female artist said that Michelin Guide will have their own criteria to select this list, so it is difficult to judge whether it is accurate or not.

Pho Hoa is also one of 7 pho restaurants nominated for the Bib Gourmand restaurant award.

“Cuisine is very difficult! Five people have ten opinions, this pho restaurant may suit one person but not another and vice versa. It is not easy to define: “What is delicious?”, because it depends on each person’s taste. When the pho tastes to the diner’s taste, it is delicious. I do not know the criteria for others to evaluate, so I cannot evaluate it,” the artist expressed.

According to artist Anh Tuyet, Hanoi pho and pho in Ho Chi Minh City will have certain differences in flavor to suit the weather and regional culture. In particular, the highlight is that Ho Chi Minh City pho will have a more prominent sweetness than Northern pho.

Artist Anh Tuyet believes that the appearance of Michelin in Vietnam is a miracle of Vietnamese cuisine.

“Whoever cooks and captures the spirit of the guests, that is, harmonizes the flavors to suit the most people, that is a success. For example, if 100 diners come to your restaurant and eat, 90 people praise the food, that is a victory. I am referring to the flavor along with other factors such as food hygiene and safety, beautiful view, customer service attitude…”, Ms. Anh Tuyet shared with Thanh Nien reporter.

For the female artist, the appearance of Michelin in Vietnam is a spectacular event for Vietnamese cuisine. Before that, she had hoped and expected that one day this award would return to Vietnam to affirm its position and spread Vietnamese cuisine more widely to the world. According to her, the appearance of Michelin will create favorable conditions to stimulate tourism and promote Vietnamese culture because there is no more attractive tourist route than the culinary route.
