Van Cu Pho Village (Dong Son, Nam Truc, Nam Dinh) is considered the cradle of the pho profession. Since the 1900s, villagers have started to earn a living by selling pho. Then this dish gradually spread to the capital and throughout the provinces as it is today. In addition to the characteristic fresh beef flavor, people in Van Cu village also hold the secret of hand-made pho noodles that meet the criteria of "soft, thin, chewy" to create a traditional bowl of pho.

To preserve the traditional profession and original values from their ancestors, the pho makers of Van Cu Village gathered artisans and organized into the Van Cu Pho Club, building the Van Cu Traditional Pho Association under the Nam Dinh Culinary Culture Association.

Artisan Co Nhu Doi, a 4th generation pho maker from Van Cu village with over 35 years of experience, hopes that pho in Van Cu village will become more popular. He and many people in the village are thinking about building pho shops that ensure consistency in quality and signs to create a brand identity for tourists.
