Mullet fish live in abundance in rivers, especially in shrimp ponds under mangrove forests. In addition to processing mullet into daily dishes, coastal housewives have also come up with a unique way to dry mullet in the sun. This fish has a long body, a porcupine head, a large belly that gradually tapers down to the tail, and its main food is algae and plankton. Its meat is delicious and is loved by many people.

According to Ms. Thu Dam, Rach Goc town, Ngoc Hien district, to process boneless dried fish, people choose fresh, large, meaty mullet; split the spine, remove the bones, wash, marinate with salt, pepper, and chili to remove the fishy smell and create an attractive red color. Salt the mullet for a few hours to absorb the spices, then dry it on a pole or net for 1-2 days in the sun for the best taste.

According to Ms. Thu Dam, in the Ngoc Hien forest, there is not only dried mullet but also many other types of sea fish that are very delicious to dry: goby, anchovy, catfish... and we must mention dried catfish - a fish with a long, slender shape, specializing in eating shrimp, so the fish meat is delicious. Catfish can be braised lightly, fried with salt, buried with salt, especially dried in the sun for one day, which is impeccable.

According to fishermen in the mangrove forest, these dried fish from the sea forest do not use preservatives, so when fried, braised, grilled... they have a rich flavor. Although the fish is cheap, through the processing hands of fishermen in the sea, it has become a famous specialty of Ca Mau Cape.
