The family has many children while the income only depends on a few fields, so since 1990, Mrs. Kim and her husband decided to make ham to earn more money. At first, the couple also encountered many difficulties, had to work and learn, gain experience after each batch of ham. Gradually, her family's ham became known to many people.

According to Ms. Kim, to make a delicious ham, the maker must carefully select the ingredients. The pork used to make ham must be the butt, fresh and hot because this is the part of the meat that has high adhesion. The ratio of lean meat, fat, and spices to be just right requires the skill and sophistication of the ham maker.

Previously, Mrs. Kim and her husband pounded the ham by hand, the meat had to be pounded really soft and smooth to meet the requirements, so it took a lot of time and effort. Gradually, machines were introduced to perform many steps in the ham making process. Before grinding, the pork had to be cut into small pieces, all the tendons removed, and the lean meat taken to make the ham delicious and aesthetically pleasing. The fish sauce used to make the ham must be delicious, pure, not industrial fish sauce. With more than 30 years of experience making ham, Mrs. Kim can measure the amount of fish sauce, pepper, etc. depending on the amount of meat.

After the meat is ground, it will be wrapped immediately to ensure quality. The banana leaves used to wrap the ham are also chosen to be young so that when the ham is boiled, it will have a characteristic aroma. Then put it in the pot and calculate the right time to have a delicious ham.

The requirements for the finished product are that when cutting the ham with a knife, the ham should not stick together, the cut ham should have a light pink color, and the cut surface should have small holes. Xuan Kim ham has a rich, delicious flavor. Currently, each ham is sold by Ms. Kim for 160,000 VND/kg.

When they learned about the One Commune One Product (OCOP) program, Ms. Kim and her husband were very supportive and excited to participate. Ms. Kim said: “This is an opportunity for our family’s pork roll to be known, chosen and enjoyed by many people.”

Xuan Kim ham has been recognized by the People's Committee of Binh Giang district as a 3-star OCOP product in 2024. Ms. Kim's family has designed bags for those who want to buy ham as gifts. Currently, she supplies 30 - 40 kg of ham to the market every day.

Since being recognized as an OCOP product, Ms. Kim and her husband have thought about expanding the consumption market and increasing output because currently, the ham produced by her family is mainly consumed in Ke Sat town.
