Since ancient times, sticky rice has become a familiar ingredient in daily life. Thanks to its large, round, soft, sticky grains, natural sweetness and characteristic aroma, sticky rice is often used to cook sticky rice and make cakes on holidays and Tet.
Not only is sticky rice an important food, it is also recognized as a medicinal herb.
VietNamNet newspaper quoted Dr. Huynh Tan Vu - Lecturer of Traditional Medicine Department, University of Medicine and Pharmacy Hospital, Ho Chi Minh City, saying that sticky rice contains a lot of protein, starch, sugar, B vitamins (found in rice bran) and inorganic substances.
In Oriental medicine, glutinous rice is called Nhu Me, which has the effect of replenishing the middle, benefiting Qi, strengthening the spleen and stomach, benefiting the lungs, and stopping sweating. Glutinous rice has a sweet taste and warm medicinal properties, and can be used in cases of headache, dizziness, stomach ulcers, coughing up blood, and low milk supply.
Medicines from sticky rice
Here are some medicinal dishes from sticky rice:
- Sticky rice wine (rice wine): The method is simple, cook brown sticky rice then mix with rice wine yeast, leave it for a few days, after the fermentation process, you will get rice wine. Eating a small bowl of rice wine every day has the effect of strengthening the spleen, replenishing the appetite, used during holidays.
Sticky rice is good for health but not everyone can eat it.
- Roasted sticky rice water: Soak in water for a day and a night, change the water a few times, wash, dry in the sun or dry, roast until golden brown and grind into powder. When using, mix with boiling water and a little sugar. Used for cases of vomiting such as gastroesophageal reflux, pyloric stenosis, and pregnancy disorders.
- Glutinous rice and yam paste: Glutinous rice (500g) soaked in water for about 12 hours, washed, dried, roasted and ground into powder. Yam (500g) roasted and ground into powder. Take 1 spoon of each at a time, add sugar and pepper powder, stir well with boiling water. Eat breakfast when hungry. Used for the elderly, children with poor appetite, weakness or long-term diarrhea with poor appetite.
- Sticky rice and red bean sweet soup: 50g sticky rice, 50g red beans, 50g rice bran, sugar cooked into sweet soup, helps cure edema.
- Banh ú in ash water: Soak glutinous rice many times until the water is clear, pour water to cover the glutinous rice and soak for about 4 hours, add 200ml of ash water and continue to soak for 20 hours.
Wash the bamboo leaves and steam them for 5 minutes to cool. Use a clean towel to dry both sides of the leaves so the cake can last longer. Fold the bamboo leaves into a funnel shape, then scoop in spoonfuls of sticky rice and press it down.
Close the top of the cake and gently fold it into a pyramid shape, wrap the cake tightly with string, and do this until all the soaked sticky rice is used up. Place the cake in a pot, pour cold water over the top of the cake, and boil for 5 hours until the cake is clear and chewy.
People who should not eat sticky rice
Although sticky rice is good for health, not everyone can eat it. According to Health & Life Newspaper, Dr. Bui Thi Yen Nhi - University of Medicine and Pharmacy Hospital, Ho Chi Minh City, Branch 3, said that the following groups of people are advised not to eat sticky rice:
- People with gastritis: The starch in glutinous rice is branched amylopectin, so it is difficult to digest and hydrolyze in the intestines and stomach, and at the same time stimulates the stomach to contract and secrete more acid. Therefore, people with acute gastritis, gastrointestinal tumors or have just undergone gastrointestinal surgery should not eat it.
- People who have just recovered from illness: Sticky rice contains amylopectin starch, which is sticky and can easily cause bloating and indigestion, so the elderly, children (children under 1 year old should not eat it), and people who have just recovered from illness and have poor digestion should be careful when using it.
- People with chronic diseases: People with diabetes, high blood fat (increased triglycerides), obesity should limit or eat less sticky rice. Because the fat, starch and glycemic index (GI) in sticky rice is higher than in regular rice, it will be difficult to control the above diseases.
Sticky rice cakes, whether sweet or salty, contain a lot of carbohydrates and sodium. People with diabetes, overweight or other chronic diseases (such as kidney disease, high blood fat) should eat as little as possible.
In addition, people with phlegm-heat constitution, fever, cough with yellow phlegm or jaundice, and bloating should not use it.
