The Michelin star system was first introduced in 1926, with a single star denoting a "very good restaurant". The second and third stars were added in 1933, with two stars meaning "excellent cooking worth returning to" and three stars "exceptional cuisine, worth a special journey".

The Michelin Guide has been published annually since 1900 by tire-making brothers Édouard and André Michelin, originally to help drivers find mechanics, hotels and, of course, good restaurants on their travels.

In the years that followed, Michelin's popularity spread abroad, with guides published for major cities around the world. The company also enlisted the help of Michelin inspectors and developed a rigorous testing system that has made the Michelin Guide the bible of fine dining it is today.

How are Michelin stars awarded?

Unlike other rating systems, Michelin stars are not based on customer reviews but on secret inspections by anonymous food experts - Michelin inspectors. The inspectors remain anonymous to avoid preferential treatment and undergo formal training by the Michelin Guide in France. They are not allowed to speak to the media, some have experience in the restaurant business. They are even encouraged not to tell friends and family about what they do. Anyone who wants to become a Michelin inspector must have a passion and understanding of food, attention to detail and the ability to blend in as an ordinary customer.

The judging criteria are the same for each restaurant, focusing on the quality of ingredients, cooking techniques and, most importantly, taste. Michelin stars are awarded solely on culinary standards, so judges do not consider factors such as the restaurant's decor or atmosphere when awarding stars, although comfort and quality are rated from 1 to 5 using the crossed fork and spoon symbol.

Restaurant owners are not told when the inspection will take place, and an inspector may return three to six times before reporting back to their peers, who then come to a collective decision on whether to award stars. A restaurant can be rated from zero to three stars, with the “Bib Gourmand” award given to restaurants that offer quality food at reasonable prices.

Michelin stars are awarded to restaurants, not individual chefs, so chefs who run multiple establishments can have more than three stars. The record for the most Michelin stars ever was held by Joël Robuchon, who held an impressive 32 Michelin stars in total. However, most restaurants will not meet Michelin standards, and the majority of those inspected have no stars.

Those who achieve the score are regularly re-examined and can lose their stars if the assessors find that standards have slipped. Even the most famous chefs can fall short of the Michelin examiners' exacting standards. Super chef Gordon Ramsay was reportedly in tears when his New York restaurant was stripped of its star, saying it was like "losing a girlfriend." Restaurants can try to regain lost stars in subsequent years' guides, but without knowing the exact criteria for rating, this can sometimes be a difficult task.

The meaning of Michelin stars

“High-quality cooking, worth stopping for!”, according to the current Michelin Guide. One Michelin star may be the lowest accolade, but only a very small percentage of restaurants worldwide have it. The city with the most one-star Michelin restaurants is currently Tokyo, with 161 locations out of tens of thousands of restaurants.

"Great food, worth coming back for!" is a two-Michelin-starred restaurant, of which there are only 414 worldwide. Two-starred restaurants always offer high-quality food and are owned by some of the best chefs with long reservation lists.

A three-star restaurant is “Outdoor cuisine, worth a special journey!”. Three stars are awarded only to the very best restaurants, with only 137 restaurants worldwide currently achieving this highest accolade. The restaurant with the longest three-star record is Les Prés d'Eugénie, France, which was first awarded three stars in 1977 and has been creating world-class cuisine ever since.

It's no surprise that the home of the Michelin guide, France, boasts the most Michelin stars, but not far behind is Japan, with 226 starred restaurants in Tokyo alone, according to Finedining Lovers .
