The story started 3 years ago, I went on a business trip to Tanh Linh and bought 2 kg of catfish sausage, intending to eat it during Tet to avoid getting bored. Unexpectedly, when my relatives returned, my wife fried some of it and rolled it in bitter cabbage with soy sauce and mustard, and cooked the rest in hot pot with thinly sliced bitter melon. Well, the relatives ate it deliciously and asked where the fish came from that was so delicious and different. In Ho Chi Minh City and Binh Duong, there are many catfish sausages from the West, but they are not as sweet, chewy and fragrant as this catfish sausage. I said that the snakehead fish in Tanh Linh are caught naturally and raised according to agricultural extension processes, but Tanh Linh fish are delicious because they live in the clean water of the La Nga River, which is clear and unpolluted, so the meat is firm and fragrant, different from snakehead fish in many other regions. Mr. Duc is one of the farmers in Tanh Linh who are diligent in researching to have high quality agricultural products. After many days, he went to the rice granary of the Mekong Delta to learn about organic rice production techniques for export using technology from developed countries in the world. Mr. Duc asked for help from the Department of Agriculture and Rural Development of Tanh Linh, then the cooperative was formed, in 2016, the cooperative started growing rice in an organic direction. Once sitting with me, he confided: “At first, there were many difficulties, from “eating and lying around” in the fields to providing practical and detailed instructions for cooperative members to follow the correct organic rice process. There was a case where I was subjective, one person secretly applied fertilizer outside the list to increase productivity. When I saw that this member's rice field was very different from the rice fields grown in an organic direction, I doubted and asked the owner, but they denied it.
