Hanoi cuisine has been honored many times by international press as one of the top cuisines in the world with a series of typical delicious dishes, but according to the Australian newspaper Sydney Morning Herald, visitors cannot leave the capital without trying this one dish.
The newspaper wrote: This famous Hanoi classic consists of pieces of freshwater fish, usually catfish, marinated with various ingredients, most notably turmeric powder, fried in oil until golden brown and served with fresh dill, green onions, peanuts and vermicelli noodles. That is Cha Ca La Vong - a wonderful dish that visitors cannot leave without trying.

More than a century ago, the Doan family on Hang Son Street started a business selling grilled fish, or cha ca, ostensibly to make money but also to provide a secret meeting place in the heart of the capital for anti-colonial resistance fighters. The Doan family restaurant still exists in Hanoi, currently located at 14 Cha Ca Street in the Old Quarter. In addition, Anh Vu Cha Ca, at 120 Giang Vo, Ba Dinh District, is also well known. Writer Nguyen Truong Quy and artist Dang Hong Quan, when working on the book Le la qua nho, chose a dish for the Old Quarter. That is cha ca. From a dish of a family on the old Hang Son Street, La Vong cha ca has become a specialty of Hanoi and is so famous that it is used to replace the name of the street where it was born - Cha Ca Street. Called cha ca, but this is fresh fish that has been meat-filtered, cut into pieces, marinated carefully, and then grilled briefly with bamboo tongs or a grill. When eating, put the pan of oil on the charcoal stove in the middle of the table, put the grilled fish in the pan and add onions and dill. When the vegetables are cooked, take the fish and vegetables out into a bowl with vermicelli, herbs, a few roasted peanuts, broken rice paper, then drizzle some shrimp paste or pure fish sauce to eat. Also according to the book's content, it is said that the best fish cake is made from Anh Vu fish caught at the Bach Hac intersection, Viet Tri. Catfish is also a delicious fish and is often used when making this dish. However, nowadays, catfish is sometimes replaced by snakehead fish. In 2018, when former US President Donald Trump visited Hanoi, he was treated to fish cake, but it is not certain whether it was eaten with shrimp paste or not.
