Ingredients for making artichoke soup:
+ Half kg of pig's feet
+ 1 carrot
+ 2 artichoke flowers
+ Sweet corn
+ Onion
+ Spices include fish sauce, salt, MSG
How to make artichoke soup:
Step 1: First, wash the artichoke flowers under running water. To clean the flowers best, separate each flower and scrub thoroughly, remove the flower stems and cut the flowers in half.
Peel carrots, shape into flowers and cut into bite-sized pieces. Wash onions. Cut sweet corn into bite-sized pieces.
Wash the pork leg with cold water and salt water, then blanch it in boiling water mixed with 2 tablespoons of seasoning powder and a little green onion, or you can replace it with shallots. When the pork leg is firm, remove it, clean it and drain.
Step 2:
Marinate the pork leg with seasoning powder and mix well to make the meat more fragrant. Then, put the pork leg in the pot, boil until the water boils, then lower the heat. During the simmering process, you should skim off the foam to make the broth clearer.
Using a pressure cooker, you set it to simmer for about 10 minutes until the pig's feet are soft. Next, add the artichokes and carrots and simmer for about 15 minutes. To make the broth sweeter, add the spring onions and season with a little fish sauce to enhance the aroma. Finally, add the onions and it's done.
