While still in school, Toan had a passion for biology and chemistry, and was fascinated by research from biology, botany, etc. After graduating from college with a major in environment, he spent time researching and learning about information related to wine products made from fruit on the media. Understanding the needs and tastes of consumers using fruit wine at parties, Toan researched wines from pineapple, guava, grapes, jackfruit, etc.
In early 2019, Toan started making pineapple wine. To produce a quality product, after many failed experiments, he was not discouraged but continued to research. With the determination to pursue the chosen path to the end, Toan researched information on books and the internet, and produced pineapple wine with his own secret. From his failures, he gained experience and produced delicious pineapple wine, which was highly appreciated by many people.
Mr. Toan said: “If I am determined, I will do it. However, the luckiest thing in my entrepreneurial journey is that my family supports me both financially and spiritually.”
In 2020, he released grape wine, jackfruit wine and continued to research and produce black sticky rice wine, cloudy sticky rice wine, and rice wine.
Mr. Mai Duc Toan is determining the ethanol concentration in rice wine.
"Thanks to research and exploration, I have my own secret recipe for making wine from fruit with its own unique flavor. Regarding fruit, I choose fresh, clean, plump, and evenly ripe fruits. The ingredients must always be clean, natural products, and no chemicals used," Toan shared.
According to Mr. Toan, after choosing the fruit that is satisfactory, it is washed, fermented according to a special recipe, after 3 months, sugar and honey are added, at this time it becomes syrup. Finally, all the fermented ingredients are put into a treatment process to remove impurities and toxins that arise during the natural fermentation process. Then the finished product is wine that is bottled in 800ml bottles.
“These ingredients are purchased from reputable places, creating a drink that not only has a delicious, unique, healthy flavor but also ensures safety for consumers. Every step ensures hygiene and food safety. Therefore, the longer the wine is sealed, the more fragrant it is, the less sour it is, and the more beautiful the color is,” said Mr. Toan.
Currently, Mr. Toan's fruit wine products are very popular with customers. Each month, he produces from 1,000 to 3,000 bottles of various types of fruit wine, with prices ranging from 20,000 to 40,000 VND/bottle depending on the type. After deducting all expenses, Mr. Toan earns a profit of 15-20 million VND per month.
His customers are wine shops and grocery stores in provinces such as Long An, Ca Mau, Dong Thap, etc. In particular, Mr. Toan connects wedding restaurants to sell or families with parties contact him to order wine.
Currently, Mr. Toan is cherishing the idea of establishing a cooperative, making fruit wine a local OCOP product, with the desire to be known by many people, and at the same time marketing the product to stores inside and outside the province to expand the market.
In 2022, Mr. Toan participated in the Kien Giang Farmers' Innovation Startup Idea Contest - Startup, with the project "Producing clean wine and fruit wine" and won third prize, receiving commendation from the Provincial Farmers' Association.
