(Dan Tri) - After a month of suspension due to violations related to preserving ingredients and cleaning the processing area, Nguyen Ninh green rice cake shop welcomed a large number of customers on the first day of reopening.
On the morning of February 3, Ms. Mai (30 years old, in Hoang Mai) went to the Nguyen Ninh traditional green rice cake establishment at 11 Hang Than (Ba Dinh district, Hanoi) to order cakes for her upcoming engagement ceremony.
The woman shared that before Tet, she intended to buy cakes here but the store posted a notice saying it was closed. After investigating, she learned that the store was inspected by authorities for food safety and hygiene and temporarily closed for repairs.
Ms. Mai tried to buy cakes at some other stores, but they were not satisfactory, so she decided to wait until after Tet. "I met the owner and was told that they would reopen after Tet. Luckily, the store opened early so I was still able to order cakes for the engagement ceremony," the woman shared.
Mr. Nguyen Duy Anh (68 years old), the owner of the establishment, said that the store started reopening on the morning of February 3, from 6:30 a.m. to 9:00 p.m.
After working with the authorities, the store upgraded the entire processing area.
The store also built two separate entrances and exits to the processing area to ensure that the production process takes place in a certain direction, helping to avoid overlapping between raw materials, finished products and employees, thereby minimizing the risk of cross-contamination.
Mr. Anh said the repairs were completed 10 days before Tet. After an inspection by the city and Ba Dinh district's interdisciplinary team, the store was allowed to reopen.
However, because green rice cakes do not contain preservatives, they are difficult to keep for long. Near Tet, the craft village lacks standard ingredients, so the shop waits until after Tet to choose the freshest green rice cakes, ensuring the best quality of the cakes.
This man admitted that closing during Tet caused the store to suffer significant losses.
Previously, on January 2, the Hanoi City Food Safety Interdisciplinary Inspection Team No. 1 conducted a surprise inspection of the Nguyen Ninh green rice cake facility. The inspection results showed many violations related to the preservation of raw materials and hygiene of the processing area.
Specifically, sacks of dried rice flakes - the main ingredient for making cakes - were stacked right at the entrance, close to moldy walls. In addition, the facility has not yet presented documents proving the origin of the ingredients, food additives and packaging that come into direct contact with the cakes.
On the morning of January 3, the authorities requested a temporary suspension of operations to correct the violations. After working with the authorities, the owner of the facility admitted the mistake and promptly took corrective measures.
He explained that due to the small area of the store located in the old quarter, the kitchen space was not up to standard.
Some documents were lost, so when the inspection team arrived, the store could not immediately present them. Immediately after that, the family supplemented all the documents and repaired the stove according to the regulations of the health department.
