Does rice take a long time to spoil because it contains preservatives?

VnExpressVnExpress16/12/2023

I cooked leftover rice and it still didn't go bad on the third day. Is it because the rice was treated with chemicals? (Hoa, 34 years old, Hanoi)

Reply:

Normally, rice that is cooked and stored properly can be left out at room temperature for about 24 hours without spoiling. After that time, bacteria and insects (bugs) will invade and cause the rice to spoil and become sour.

It is unusual for rice to go bad after 3 days at room temperature, and you should not use it anymore. You did not specify whether the rice was left in the covered pot, or just left in the rice cooker and placed on the table. If left in a closed rice cooker, the risk of it going bad is higher, because the lid often has condensation, and bacteria can easily penetrate.

In case cold rice is stored in the refrigerator, the time it takes for the rice to spoil will be longer, but it should not be stored for too long. If you want to save and reuse it, it is best to use cold rice within 24 hours, because even if it is not spoiled, the rice will lose its nutrients if left for a long time.

Non-stale rice can occur in the case of rice or rice with preservatives. With rice, normally, traders often use preservatives to prevent weevils.

To know if rice is treated with chemicals, you can only do a thorough test (if possible), which is quite expensive and time-consuming. It is best to throw away that rice and not use it anymore.
