How to make plum jam
Ingredient
Fresh plums: 1 kg, brown sugar: 500 grams, fresh ginger: 100 grams, salt: 1 tablespoon, lime water: 500 ml.
Making
Raw material preparation
Soak plums in diluted salt water for 30 minutes. Wash each plum, rub thoroughly with your hands, remove and drain.
Use a knife to make thin cuts along the plums and soak them in lime water for about 4 hours to make the plums supple, clear and tastier when stewed.

Take out the plums, wash thoroughly with lime water several times. Peel the ginger, wash, and slice thinly.
Marinate plums with sugar
Boil 1 liter of water, put the plums in to blanch for 1 minute, remove and soak in ice water for 10 minutes to make the plums crispy. Remove and drain. Add 500 grams of brown sugar to a bowl, mix well with the plums, making sure the plums absorb the sugar evenly.
Cover the bowl with plastic wrap and place in the refrigerator. Marinate the plums for 8 hours until the sugar dissolves.
Plum snail
Place the pan on the stove, pour in the plum syrup and boil until it thickens. Add the plums, turn on low heat, stir well with chopsticks for about 10 minutes, put on a plate and set aside.
Add 100 grams of shredded ginger, continue to simmer for 5 minutes over low heat. Pour the mixture of sugar water and shredded ginger over the plums, dry in the hot sun for 4 hours and it's done.

If there is not enough sunlight, you can arrange the plums on a tray and bake them in the oven. Dry them at 100 degrees Celsius for about 20 minutes or dry them in the sun for 2 days and they are ready to enjoy.
Finished product
Hanoi plum jam has a traditional flavor, typical of the North. The jam is sweet, crunchy and very tasty, it will be more delicious when combined with a cup of hot tea.

Fresh red papaya: 1 kg, white sugar: 200 grams, salt: 1 tablespoon.
Making

Place the plums on a tray and place them in a special dryer or oven. Dry the plums at 100 degrees Celsius for 60 minutes and they are done. If you don’t have an oven, you can dry the plums in the sun for about 4 hours until they are dry.

Southern plum jam has a sweet and fragrant taste typical of plum, and is very sweet and chewy when bitten. This jam is suitable for entertaining guests or sipping with hot tea in the late afternoon.
