Mr. Muoi is the son of Vietnamese Heroic Mother Nguyen Thi Bay. His family has been making wine since 1973. Since childhood, his parents taught him that people's health should be the most important thing in his job, and that he should not go against his conscience for economic gain. For decades, he has kept this in mind and followed it. Currently, he is the Head of the Farmers' Association of Hamlet 4.
According to Mr. Muoi, the traditional wine-making profession is quite hard. It takes a lot of time and effort to make one liter of wine. Every day, he wakes up early in the morning and works hard until late afternoon. In the past, cooking with rice husks was very hard, but now using coal is much easier.
Mr. Muoi said: “I brew wine with my heart, if I do it wrong, not only will I lose my reputation but also affect my hometown”. With this in mind, he always brews according to the recipe passed down from his parents, the flavor of his family’s wine has not changed for decades, and is loved by customers.
For more than half a century of making wine, Mr. Nguyen Van Muoi (Hamlet 4, Nhi Thanh Commune, Thu Thua District) has always worked with his heart for the health of consumers and the reputation of his family.
Every glutinous rice season, Mr. Muoi chooses the right type and buys 5-6 tons to cook gradually. Mr. Muoi said that to cook a good batch of wine, all steps need to be meticulous.
First, he chooses the right sticky rice because not all types of sticky rice can be cooked to produce alcohol. Then, he soaks the sticky rice in cold water, cooks it, and spreads it into a thin layer to cool it, preventing the sticky rice from clumping.
When the sticky rice is cool and still warm, sprinkle the yeast. The rice should not be too hot or too cold because it can kill the yeast. This step requires sprinkling evenly so that the yeast is evenly distributed. Then, he incubates the rice.
After brewing, the distillation step is done. This is a very important step, the brewer must know how to choose the quality of the cooking pot as well as adjust the heat appropriately to make the wine delicious. After that, Mr. Muoi does the final step of filtering the wine to remove residue and impurities.
With this traditional way of making wine, Mr. Muoi produces 60 liters of wine every day and does not increase the amount to ensure that each step is carried out carefully and meticulously.
Mr. Muoi never rests all year round, cooking and selling out every day. People order the most when there is a party at home, many workers also come to buy on weekends to sip to ease their homesickness. They love Mr. Muoi's wine because it is affordable, alcohol-free, delicious, etc.
After more than half a century of traditional wine making, Mr. Muoi has been able to ensure that his children are educated and successful, and that his family has a stable life. In addition to his family's traditional profession, he also grows more than 6,000 square meters of sticky rice.
