For a long time, salted roasted cashew nuts have been a familiar "snack" for Binh Phuoc people in particular and people in many provinces and cities across the country, especially during holidays and Tet. Therefore, for those who are attached to the job of roasting cashew nuts, the Tet season is the busiest. Products processed from cashew nuts in general and Binh Phuoc salted roasted cashew nuts in particular are now available in many supermarkets, chain stores, restaurants and for export, so businesses and establishments in Binh Phuoc process them all year round.

For skilled workers, they rely on their own experience to know whether the roasted cashew nuts are cooked or not.

Currently, there are many different ways to roast and dry cashew nuts such as using a pan, electric roaster, gas roaster... But for "gourmets", cashew nuts roasted with firewood are still the most delicious, retaining the original flavor and having a unique aroma that roasting with gas or electricity cannot achieve. This is the reason why many cashew processing and trading establishments in Binh Phuoc still maintain the form of roasting cashew nuts with firewood.

“You have to keep the fire steady and stir the nuts continuously. If the fire is too high, the nuts will burn immediately,” said Hoang Van Nam, a worker at Quang Vinh Import-Export Company Limited, Phuoc Long Town, who has 8 years of experience in the profession. To produce delicious salted roasted cashew nuts, the raw cashew nuts must be of good quality. The roasted salt is refined salt, usually Vietnamese salt or imported from Thailand. The roasted cashew salt can be reused 2-3 times. The firewood used for roasting is 100% dried cashew wood. During the roasting process, the fire must be large and steady so that the cashew nuts are just cooked. For skilled workers, they rely on their own experience to know whether the cashew nuts are cooked or not. “Some people feel with their hands, eyes, sense of smell, and taste to assess the ripeness of the cashew nuts. Personally, I look at the color of the shell surrounding the cashew nuts and the smoke coming from the roasting pot to know if the cashew nuts are cooked or not,” said Nam.

Mr. Do Huu Van in Binh Tan commune, Phu Rieng district shared: Cashew nut roasting is quite hard work, the worker has to constantly stand next to the roasting oven, sweating because of the heat. In the past, roasting had to be done in a very heavy pan, but now there are rotating roasting ovens made of stainless steel, so the roaster has less trouble. We take on contracts to roast cashew nuts, during Tet the workload increases, but in return, the income is higher.

Binh Phuoc cashew nuts are roasted in the traditional way with firewood, have a fatty, rich taste, rich in salt and a characteristic aroma. This is a product loved by many consumers.
