The highland commune of Na Hau (Van Yen district, Yen Bai province) is a locality located in the core area of ​​Na Hau Nature Reserve, so the commune has a favorable climate and soil for developing many well-known culinary products, such as: cold-water fish (especially sturgeon), black chicken, night snails and wild vegetables...

But the most rustic, unique and nutritious hidden dish of the Mong people here is the dishes made from night snails such as steamed snails, stir-fried snails, snail rolls...

The Na Hau snails are raised by the Mong people here in rice fields, or in ponds with a regular supply of clean water.

Snails only grow thanks to water and green moss formed from the rice fields, so they have become a local specialty product and only Na Hau has fatty, delicious, sweet, nutritious Da snails.

Da snails are grown by most Mong households in Na Hau commune when they both cultivate rice and raise snails in the production fields. According to the locals, raising Da snails is very leisurely, the water source and climate here are also very good for snails to grow.

Ms. Ly Thi Tung in Ban Tat village (Na Hau commune, Van Yen district, Yen Bai province) shared that, realizing the economic benefits of snail farming, her family rented more fields and borrowed more capital to invest in buying snails.

"Raising this snail is easy, doesn't require much care, isn't as hard as growing rice, and has a better income than growing rice. My family has been raising snails in the fields for 3 years now, and each year we earn about 20 to 30 million VND from snails," said Ms. Tung.

Coming to Na Hau at any time of the year, but especially during local festivals, visitors can enjoy delicious dishes and specialties from the mountains and forests of Na Hau. Among them, the most special dishes are dishes made from night snails.

Steamed snails with lemongrass and lime leaves; grilled snail patties, or just stir-fried snails with special spices also create impressions in the hearts of tourists.

Mr. Pham Van Quyet, a tourist from Yen Bai City, said that although he had been to many places and enjoyed many dishes made from snails, when he came to Na Hau and enjoyed the dishes made from the Mong people's snails, he was truly impressed by the fatty, sweet aroma of this snail.

"The first time I went to Na Hau, I was really surprised by the beautiful scenery as well as the friendliness of the people here. Regarding the food, I found the snails here delicious, the snails here are crispy, clean, and have a different taste from the snails in the lowlands," Mr. Quyet added.

Unique, attractive and most popular with tourists to Na Hau is grilled snail patties on charcoal. Large, fat snails are brought back, soaked to clean the mud, washed to clean the moss, steamed, the snail meat is scooped out, chopped, mixed with chicken eggs, herbs, spices... shaped into patties, put into bamboo tubes or reeds, grilled over a fire so that the snail patties are cooked by steam.
When enjoying the Lam snail sausage, you will have the rich sweet taste of snails, the aroma crystallized from the bamboo trees, reeds and wild vegetables. That flavor is rich, attractive, unique, and distinctive like the humanity and the friendly, affectionate and hospitable Na Hau people.

Mr. Hoang Van Dat, Na Hau Agricultural and Tourism Cooperative (Van Yen district, Yen Bai province), said: "Tourists coming to Na Hau have many choices of dishes such as grilled sturgeon, natural wild vegetables. Among them, the bamboo tube snail sausage is a dish that tourists often order and is very popular because the snails are raised naturally, very clean and have a delicious, sweet taste."

We have directed food service establishments and local people to ensure the supply of clean food, imbued with local identity to serve tourists, especially during festivals when the number of tourists coming to Na Hau is high.
