The world-famous culinary information site TasteAtlas has just introduced Hai Phong crab noodle soup as one of the best soups in the world.

TasteAtlas calls the crab noodle soup “Red noodle soup” and describes the colorful dish as a local specialty of Hai Phong. The broth is made from pork and is topped with a variety of ingredients such as crab meat, raw vegetables, meatballs, pork sausage, or grilled pork wrapped in betel leaves.

Ingredients may vary, but each bowl must include a portion of locally produced rice noodles with a distinctive light red color (banh da do). Rice noodles are served with herbs, lime and fresh chili.

TasteAtlas 's introduction is not accurate in detailing that the broth for crab noodle soup is made from pork. In fact, the broth for authentic Hai Phong crab noodle soup must be made from ground field crab.

Hai Phong crab noodle soup has long been considered one of the typical symbols of Hai Phong cuisine. The popularity of this dish is not only limited to Vietnam but also spread to the world.

In 2012 in Faridabad (India), Hai Phong's crab noodle soup and 11 other Vietnamese dishes such as pho, spring rolls, Ninh Binh burnt rice... were recognized and set a record for "Asian culinary value."

According to Hai Phong Travel Guide , Hai Phong crab rice noodles appeared in the 10th century. The predecessor of this dish was originally just a special dry food called dipped rice noodles.

This type of dried food only needs to be dipped in boiling water with a little salt to make a delicious dish and can be preserved for a long time.

It was not until the 13th century that a Tran Dynasty official, Tran Quoc Thi, inherited and processed the dish, adding spices to make it more delicious.

Over time, rice paper cake has become more and more popular and is prepared with ground crab broth, instead of simply boiling water like in the old days.

Banh da cua is a dish that is suitable for both summer and winter. Hai Phong people are so proud of this specialty that they say that if tourists take a "Food tour" in the Port City without eating Banh da cua, the "Food tour" is not complete.

Not only rice noodles with field crab, Hai Phong has also added rice noodles with sea crab, rice noodles with mantis shrimp, mixed seafood rice noodles... Each dish has its own flavor, all are in the top culinary dishes that tourists must try when coming to the city of red phoenix flowers.
