Good news spread far and wide, helping the grilled pork noodle shop of Ms. Truong Thi My Hue (47 years old) on Lac Long Quan Street (Ward 3, District 11) to be crowded with customers for over 25 years.
When the owner of a meat restaurant… became a vegetarian
Early morning, Ho Chi Minh City is chilly. On the way to work, I stopped by Mrs. Hue's grilled pork noodle shop. There are many customers coming to eat in as well as to take away, so the owner and a few employees in the shop work continuously so that no one has to wait too long.

As soon as I walked in, the fragrant smell of fried spring rolls, spring rolls, and grilled meat wafted into my nose in the cool morning air, making my stomach growl even more. I ordered a full portion of noodles for 30,000 VND, instead of the special portion of 40,000 VND like the previous times, because it was just right for breakfast.
Many customers often whisper to each other that a 30,000 VND portion is enough to fill them up because the owner gives them a lot of noodles and food. Ms. Hue smiles and says that the customers at the restaurant are mainly workers who need to eat their fill before going to work, so she gives them a little more.
She opened the restaurant in 1998 when she married a Saigon man. The owner is originally from Can Tho. Back home, her mother had a small grilled pork noodle shop to raise 7 children, which was the family's main source of income.

There is one special thing that surprises every customer, that the owner has not eaten the food she cooks for over 10 years. Because she is a vegetarian. “If you don’t eat it, don’t season it, how can you sell it to customers?”. When I asked, the owner slowly explained that she has helped her mother sell it since she was a child, and after more than ten years of selling this dish, the way she cooks it has “seeped into her blood”.
It was so familiar that she didn't need to season it to make it taste exactly like her mother had told her. Furthermore, if she wanted to know if her dish was delicious or not, or if it had changed from usual, she could just ask the customer.
Cheap but delicious!
In a flash, the bowl of grilled pork vermicelli I ordered was on the table. The attractive vermicelli with skewered meat, spring rolls, crispy fried spring rolls served with cucumber, vegetables, bean sprouts and sweet and sour fish sauce.

According to the owner, the skewered meat is marinated according to a special recipe that customers will feel when eating.
Mr. Thinh (57 years old, living in District 11) has been a regular customer of the restaurant for nearly ten years. Working as a motorbike taxi driver and living nearby, he often visits Ms. Hue's restaurant. "The food is delicious, I have eaten at many places but I still like this place the most. In addition, the owner is cute and friendly. The prices here are cheap but the food is plentiful, eating one meal makes you full and gives you the energy to go to work," he commented, giving the restaurant's flavor 9/10.

The restaurant is open from 6am to 2pm, and is crowded in the morning or early afternoon. The owner said that thanks to the grilled pork noodle shop in her hometown, her mother raised 7 children. Also thanks to this restaurant, she raised 2 children to adulthood, both of whom now have their own jobs.
The owner said she is determined to keep the restaurant running until she can no longer do so. Her joy every day is serving bowls of noodles with all her heart and receiving compliments from both regular and new customers.
