Taking advantage of the rare sunny weather at the end of the year, Ms. Nguyen Thi Ly (46 years old; owner of Viet Ly rice paper establishment, Thinh Truong commune, Nghi Loc, Nghe An) and her workers brought each tray of freshly made rice paper out to the drying rack to dry quickly in time for delivery to customers. "The weather forecast predicts rain in a few days, so we have to hurry up and make a lot of rice paper and dry it quickly, otherwise if it rains, we won't be able to make it anymore," Ms. Ly said. |
Tay Lan rice paper village produces rice paper all year round. However, during the Lunar New Year, the number of customers ordering is high, so the establishments also increase production of rice paper. |
Every day, Ms. Ly's facility produces nearly 10,000 cakes. During Tet, Ms. Ly has to hire more workers to deliver them to customers on time. |
Tay Lan rice paper has a special delicious flavor, so it is very popular with customers. The owners of the cake production facilities said that the cake is mainly made from rice flour and sesame. However, each facility has its own secret to mixing in additional spices to create a unique flavor and rich, delicious taste for the cake. |
“To make delicious cakes, the ingredients must be of the highest quality. The rice used to make the cakes must be grade 1 rice. My facility spends 600 million VND a year on rice. The sesame must be good quality black sesame to have a rich, fatty taste. When making the cakes, spices such as pepper, garlic, salt, MSG, etc. will be added to make the cakes delicious, fragrant, and flavorful,” said Ms. Nguyen Thi Ly. |
After being coated, the cakes will be placed on each rack. |

Depending on customer's request, the cake will be packaged raw or baked. |
"There are many orders during Tet so I'm busy, working non-stop without any time to rest," said Nguyen Thi Han (50 years old), adding that she was hired to make cakes for a salary of about 250-300 thousand VND per day. |
