How to preserve processed foods
Chung cake, tet cake
This is a delicious traditional dish, a dish that is relatively complete in terms of food groups and rich in nutrients. People often think that banh chung should not be stored in the refrigerator because it can easily become hard. However, if the weather is hot, it can be stored in the refrigerator, cut as you eat, and cover the rest with plastic wrap.
Note that when taking the cake out of the refrigerator, you need to boil, steam or fry it before eating. You should limit frying the cake because it increases the amount of fat (oil/grease) in your daily diet, which is not good for your health. For cakes with white mold, fermented sour smell... it is best not to eat because all moldy foods produce aflatoxin. This toxin can cause adverse effects on humans over a long period of time accumulating aflatoxin from food.
Ham, sausage
Ham is a typical Vietnamese delicacy, an indispensable dish during the traditional Tet holiday. There are many types of ham: pork roll, beef roll, ear roll, stir-fried ham... Pork roll is mainly made of lean pork, in addition to fat, fish sauce and spices, so the ham cannot be kept for a long time. Borax cannot be used in pork roll because it is not good for health, the way to preserve pork roll, beef roll, and sausage is the same, keep at room temperature below 25 degrees Celsius. When preserved properly, ham will last 4-6 days if kept in the refrigerator, or even about 10 days if kept in the freezer, if you accidentally buy too much.
Remove the ham from the freezer and leave at room temperature for about 4 hours or transfer to the refrigerator 8 hours before use.
If you want to use it immediately, defrost it quickly: wrap the ham in plastic wrap and soak it in cold water for about 1 hour. However, because families usually only buy enough to eat within 1 week, it is not necessary to store the ham in the freezer because the defrosting process will cause loss of nutrients.
Ear sausage and stir-fried sausage, due to their sticky nature, must be kept at cool temperatures, so to preserve them, they should be kept in the refrigerator.
Jellied meat
Jellied meat is a traditional and unique dish of the Vietnamese people. Jellied meat is eaten with hot rice, dipped in pure fish sauce with lemon and chili, and eaten with pickled onions, pickled cabbage, pickled shallots, etc. It is a dish used during Tet and other normal days of the year.
With frozen meat, you should divide it into small boxes, enough for each meal, and store it in the refrigerator. This will both retain the characteristic flavor and help the dish last longer.
Pickled onions
An indispensable dish in the traditional Tet holiday of the Vietnamese people, since a long time ago there has been a saying "Green Chung cake, fatty meat, pickled onions, red parallel sentences", it is used to eat with Chung cake or fatty dishes to reduce the feeling of fullness. The mild sourness, slight spiciness and aroma of pickled onions help enhance the flavor of other dishes and stimulate better digestion.
Should be stored in a cool place, when eating, use clean chopsticks to pick up the pickled onions, rinse with cooled boiled water or diluted salt water, then peel off the outer skin, take the white pickled onions to eat.
Other cooked foods
Do not put vegetables in the refrigerator when not used up, because the nitrate content in green vegetables is quite high. If cooked and left for too long, bacteria will decompose, the nitrate will turn into nitrite - a carcinogen, even if you reheat it, it cannot be removed. Therefore, do not eat vegetables that have been left overnight.
Cooked foods should be eaten immediately, and cooked foods should not be left at room temperature for more than 2 hours. Leftover foods after meals should be reheated, cooled, and then placed in the refrigerator. If hot food is placed in the refrigerator, where the temperature is low, the food will deteriorate, the water in the food will condense into steam, promoting the growth of harmful bacteria, leading to food poisoning. When eating, food must be recooked before use because the temperature in the refrigerator only limits the growth of bacteria but cannot destroy it.
Food taken out of the refrigerator is only used once for the next meal, and if not left for the next meal, the longest time the food is left is 5-6 hours. Food contaminated with bacteria, left in the refrigerator for a long time will still produce toxins. When reheated, the bacteria will be destroyed at a temperature of 100ºC, but the toxins produced by the bacteria are still toxic, causing poisoning to the user. You should prepare just enough food, do not overcook it, because when the leftover food is reheated, the nutrients will be lost.
How to preserve unprocessed food
Meat, fish and seafood: after purchasing, wash and divide into small portions for each meal. Wrap food with plastic wrap or put in a vacuum bag to limit exposure to air, then store in the freezer. The ideal temperature to preserve meat and fish is -18°C. When needed, move food to the refrigerator to defrost naturally, avoid defrosting with hot water or leaving it at room temperature for too long.
Vegetables: To keep vegetables fresh for a long time, you need to remove any damaged parts, wash them and let them dry thoroughly. Use paper towels or a clean cloth to line the bottom of a plastic container, then put the vegetables in and store them in the refrigerator. This method helps absorb excess moisture, keeping the vegetables from getting soggy.
Eggs: Eggs should be stored in the refrigerator at a temperature of 0-4°C. Place the large end of the egg facing up to keep the yolk in place and increase storage time.
