Physician Bui Dac Sang, Hanoi Oriental Medicine Association, recommends buying beef tripe early in the morning, when the cow has just been slaughtered, to choose fresh tripe. Fresh, good tripe, not soaked in chemicals, has an intact black membrane, slightly rough (not cleaned) or has a natural pinkish-white color (cleaned).

The book is thick, has a very distinctive scent, feels very firm when held and can still feel its viscosity when touched. You should avoid buying it in the late afternoon because at that time the beef book will no longer be fresh. Beef book left for a long time has a strong smell and becomes soft and mushy, not chewy.

The pure white book cover is very beautiful, but when you touch the book cover, it is dry and no longer has the natural slime layer that is often removed with chemicals, so you should not buy it.

How to whiten cow book

- Blanch in boiling water: Put the beef tripe in a pot of boiling water and blanch for about 5 - 8 minutes so that the black membrane softens and is no longer stuck to the tripe. Next, take the tripe out, rinse with cold water and use a knife to scrape off the dirt and black membrane stuck to the tripe. After scraping, rinse with clean water and let dry.

- Using betel lime: Put the purchased tripe leaves in a basin, then use 2 handfuls of betel lime to rub on the surface of the tripe, squeeze thoroughly and strongly, then soak in it for about 5 minutes.

After soaking, use a knife to scrape off the dirt and black film on the leaves and then rinse with clean water. Continue to use a handful of betel lime to rub again, scrape off all the remaining black film and impurities, then wash and drain. Rinse many times so that the lime does not stick to the food.

How to clean and deodorize beef tripe

- Use salt, ginger and lemon: To clean and deodorize tripe, first put the tripe leaves in a small bowl, add a sufficient amount of salt and squeeze thoroughly.

Do the above steps twice and then wash it with clean water. Crush a little ginger and pour in a sufficient amount of white wine to create a ginger wine mixture. Put the mixture in a bowl of leaves and squeeze it with your hands for about 3-5 minutes. Then, wash it with clean water once more and squeeze 2 lemons, continue to squeeze hard for about 3-5 minutes and then wash it clean.

- Use salt, vinegar and baking soda: Prepare a small bowl of vinegar water and add a little salt to dilute it. Then, soak the beef tripe in it for about 3 - 5 minutes. Next, add 1 teaspoon of baking soda and squeeze the tripe leaves thoroughly with your hands. Use a knife to scrape off all the black membrane and dirt, then wash the tripe with clean water.
