From around 6:30 a.m. every day, vehicles continuously come and go at 189 Pham Phu Thu (District 6), making noise, tearing apart the quiet atmosphere of the early morning.
The locals here are not surprised, because that is the familiar scene of Kim Mai roasted pork shop - where the aroma of crispy roasted pork becomes a familiar sign, signaling the start of a bustling new day.
When kindness fills the loaf of bread
In addition to roast pork sold by the kilo, Ms. Mai’s roast pork sandwiches are also very popular with customers. For only 15,000 VND, you can have a sandwich filled with meat soaked in hot sauce.
The roast pork is sliced thickly, the lean meat is tender and juicy, the golden crispy skin makes each bite more complete. The thick sauce covers the cake, enhancing the rich flavor, served with cucumber and coriander.
The sauce is made from familiar ingredients such as sugar, fish sauce, and five-spice powder, but it is the soul of the dish, thanks to the unique seasoning secret that only she knows.
Many diners humorously commented that this sandwich has too much meat, and it took forever to find the vegetables.

Explaining why the bread is so cheap, Ms. Mai believes that "if you sell, you have to sell the best". The meat used for the bread is also of the highest quality, not the "leftovers" or "scraps".
Seeing that the staff did not serve much meat, she immediately reminded them: "Why are you selling so little? Sell more. When there are customers, you have to serve them with all your heart!"
"She wants everyone to be able to eat, from students to manual workers. In fact, her joy does not only come from profit, but from bringing delicious meals to everyone," Ms. Mai shared.
Originated from the old furnace
Ms. Mai said that in the past, her sister married a man who sold roasted pork. Her sister also opened a shop but it was not a good "fate", after a few months of selling, she could not survive and had to leave the oven behind.
At that time, Ms. Mai was still young but she figured out how to make roasted pork by herself, then took over the oven and built the Kim Mai brand. The family helped sell together. The daughter-in-law sold in the early morning, and her daughter sold in the afternoon.
Kim Mai roast pork shop does not use any delivery apps, but customers only need to call and transfer money, a few minutes later depending on the distance, hot roast pork will be delivered to the door.
For over 30 years, Kim Mai roasted pork has remained attractive to customers. Tuoi Tre Online noted that although the shop is very crowded around 3-4pm, customers said it is twice as crowded in the morning, especially during holidays and Tet.

Early in the morning, Ms. Mai's stall was filled with all kinds of meat such as pork belly, char siu, thighs, ribs, pork legs, pork skin...
The roasted pork pieces are stacked, piping hot, with amber-colored, crispy skin, with a layer of soft and naturally sweet meat, marinated with a traditional sauce - a flavor that, as Ms. Mai said, "is hard to find anywhere else".
It would be a mistake not to mention the golden crispy pork skin, which has had all the fat removed so it's not greasy to eat.
Pork belly costs 320,000 VND/kg, char siu and ribs cost 300,000 VND/kg, pork skin costs 500,000 VND/kg, dishes with bones such as ears, pig's feet, pig's head... range from 150,000 - 200,000 VND/kg.
Many people may be surprised by the high price, but anyone who has eaten it will say that the quality of Kim Mai roasted pork is undeniable. "This place sells it at a higher price because you get what you pay for. I don't add any additives, I sell it and I eat it," Ms. Mai shared with Tuoi Tre Online .
The pork here is marinated and roasted in batches, not pre-cooked and displayed like many other places. Many times the meat has not even been cooked yet, customers have to wait to buy, not wanting to eat elsewhere for fear of "not being used to the taste".
