Foodies in Japan are buzzing about an exquisite ice cream made from luxury ingredients that costs nearly $6,400.

Guinness World Records has just named the world’s most expensive ice cream. The frozen dessert, called byakuya (meaning “white night” in Japanese), is currently selling for 880,000 yen ($6,380) per serving.

This ice cream is a product of Japanese ice cream brand Cellato. On its website, Cellato says that this is gelato, the name “white night” hints at the Italian origin of this dish.

The highlight of this ice cream is the white truffle, a specialty of Alba, Italy. This ingredient alone costs 2 million Yen (about 14,500 USD) per kilogram. The top layer of the ice cream is decorated with an edible gold leaf, two types of cheese and “Sakekasu”, a thick ingredient derived from the sake production process.

Sharing with Guinness World Records, a Cellato representative said, “It took us more than 1.5 years to develop the product, with a lot of testing to get the right flavor.”

According to the representative, Cellato's mission is not only to create delicious, expensive desserts but also to create a culinary adventure that combines European ingredients with traditional Japanese dishes. So the company invited Tadayoshi Yamada, the chef at RiVi, an Osaka-based restaurant known for its French-Japanese fusion cuisine, to lead the project.

According to Cellato, the dessert is available for sale in Japan and shipped directly to consumers. With strict procedures, the dish will be guaranteed to taste exactly as it reaches customers.

To fully enjoy this expensive ice cream, customers are instructed to let the ice cream thaw at room temperature or microwave it at 500 watts for 10-20 seconds if the texture is still firm. Then pour in the white truffles as soon as the ice cream softens, before mixing with a hand-held metal spoon.

In addition, Cellato also recommends customers to combine this ice cream tasting with sake or French white wine.

The company has previously launched an ice cream product containing black truffles. It said it plans to diversify its eye-catching, expensive product line to include champagne and caviar in the future.
