Having had a history of chronic kidney disease for many years, unexpectedly just because of a plate of spinach, Mr. Ly suffered acute kidney damage and had to undergo dialysis for the rest of his life.

A man living in Ningbo, Zhejiang, China is facing the risk of lifelong kidney dialysis just because of a plate of spinach. This incident once again sounds the alarm about proper eating, especially for people with underlying diseases.

According to local media, Mr. Li (61 years old) after eating a plate of spinach on December 11 suddenly felt tired, nauseous and vomited. He was immediately taken to the hospital and diagnosed with acute kidney injury.

The treating doctor said that Mr. Li had a history of chronic kidney disease for many years. The main cause of his acute kidney injury this time was due to oxalate (oxalic acid) found in spinach. Oxalate is a natural compound found in many plants, when absorbed in excess, it will promote the formation of calcium oxalate stones, causing blockage and kidney damage.

Ông Lý không ngờ mình ăn uống thanh đạm nhưng vẫn phải chạy thận.

Mr. Ly did not expect that he would have to have dialysis even though he ate frugally.

"Sadly, Mr. Ly's condition is quite serious, he may have to undergo dialysis for the rest of his life," the doctor said.

After regaining consciousness, Mr. Ly shared that because he knew he had a chronic illness, he always focused on eating frugally and avoiding greasy foods. He was extremely surprised to get sick from just a plate of spinach.

Not everyone who eats spinach will get sick, the doctor added. However, people with underlying kidney disease should be especially careful. The best way to reduce the amount of oxalate in vegetables is to boil them for 60 seconds before cooking.

In addition to boiling vegetables, doctors also give some other advice to reduce the risk of oxalate-related diseases, specifically as follows:

Choose young greens: Young spinach is generally lower in oxalates than older greens.

Combine a variety of foods: When eating spinach, combine it with other vegetables such as bok choy, mushrooms, seaweed, eggplant... to help oxalate be eliminated quickly and reduce the risk of stone formation.

Drink enough water : Drinking enough water also helps the kidneys function better and eliminate harmful substances from the body.

Mr. Ly’s case is a warning to everyone about the importance of eating scientifically and carefully. Not all good foods can be eaten indiscriminately. We should learn carefully about the foods we eat, especially those with underlying diseases. In addition, regular health check-ups are also very necessary to detect and treat diseases early.
