Laotian ham – 3-star OCOP product with traditional flavor

(Baohatinh.vn) - Mr. Tran Van Lao in Tan Loc commune (Loc Ha, Ha Tinh) has chosen fresh ingredients, plus the "secret" of seasoning and processing to spread the flavor of Mr. Lao's pork roll product.

Mr. Nguyen Van Lao and his wife skinned, sliced, and processed fresh meat to prepare for making batches of high-quality pork rolls.

After being recognized as a 3-star OCOP product (November 8, 2024), in recent days, the number of customers ordering Mr. Lao's pork roll products from Mr. Nguyen Van Lao's production facility in Kim Tan village (Tan Loc commune) has increased by approximately 10% compared to before. Especially on nice days, there are many weddings in the area, so Mr. Lao and his wife and 2 workers have to wake up at 4 am to make 50 kg of pork roll to sell to unexpected customers and daily customers.

Mr. Tran Van Lao - the owner of the production facility said: "I "got into" the profession nearly 13 years ago when I learned and absorbed the secrets and methods of producing pork roll from a highly skilled relative in the area. During the process of working, I also drew on my own experience to make my products increasingly perfect, delicious, high-quality, safe for health, and beautiful in appearance; especially in the way of using ingredients, marinating and adjusting each type of spice appropriately. In addition, my family has also invested nearly 300 million VND to purchase modern equipment (steamer, meat grinder, freezer, mold set...) and renovate and expand the processing area so that the products meet 3-star OCOP standards".

To have the best batches of pork roll, with the traditional taste, suitable for regional tastes, Mr. Nguyen Van Lao has carried out many complicated and meticulous steps from selecting fresh and delicious meat, carefully preparing the ingredients, ensuring the smoothness when grinding, molding, wrapping in banana leaves, steaming time... to mixing spices in the right proportions.


In particular, because he has worked in the livestock slaughtering business for many years, Mr. Lao knows how to choose fresh, delicious pork with a balanced fat and lean ratio, ensuring food safety during processing. In addition, he also has close contracts with suppliers of raw materials of clear origin and good quality, saying “no” to banned additives.

Put in the steamer for about 70 minutes/batch.

Mr. Lao added: “Giò lụa is a popular traditional dish, available in many places, produced by many people, and each region will have its own flavors; in which, my product always ensures the fatty taste of meat, the delicious aroma of typical spices, and is chewy, crispy, smooth, and eye-catching. In 2024, I expect to produce 5,060 kg of products, with a revenue of nearly 610 million VND. The products are sold to restaurants, establishments specializing in serving festivals and weddings in the communes of Tan Loc, Hong Loc, Binh An, Thinh Loc and neighboring areas; some have even been sold in Ho Chi Minh City, Korea…”.

Mr. Nguyen Van Tuan - owner of a food business in Cay market (Thach Ha town, Thach Ha district) said: "Because I see that Mr. Lao's pork roll products are of good quality, have reasonable prices, are loved by diners, and are packaged in suitable weights..., I signed a contract to buy pork roll with Mr. Nguyen Van Lao for a 5-year cooperation period. In addition to selling 3-5 kg ​​at the shop every day, I also recommend it to relatives, friends, and neighbors."

Currently, Ong Lao ham is the only product of Tan Loc commune that meets the 3-star OCOP standard and is the second ham product of Loc Ha district to receive this honor. Therefore, the owner of the facility is continuing to develop production in conjunction with market research, analyzing competitive factors, building investment strategies suitable to the reality and resources of the family... so that in 2025, it will produce 5,560 kg of products, and in 2026, it will reach 6,123 kg of products.

In particular, at this time, the owner of the facility is focusing on preparing raw materials and expanding customers to prepare products for sale at the end of the year (usually 20-30% higher than normal days); especially on the days before the traditional New Year, nearly 200kg of products are sold each day.

Mr. Phan Ba ​​Ninh - an officer of the Office of New Rural Development of Loc Ha district informed: "For many years, the silk ham of Tran Van Lao production facility has been a quality, reputable product, highly appreciated by consumers, so we have surveyed, reviewed, and supported to achieve 3-star OCOP standards. Currently, the unit is continuing to encourage and motivate the facility owner to continue to improve product quality, invest in equipment, build distribution stores, approach large restaurants and supermarkets... to increase sales output by about 10% per year. Thereby, contributing to improving production efficiency, ensuring profits, gradually moving towards achieving 4-star OCOP standards".
