Noodles and Hu Tieu are probably the two most popular dishes in Tay Ninh. Here, people use round rice noodles, poured directly into the pot of broth (water) instead of boiling them separately, so the noodles are soft and absorb the spices very well. Tay Ninh people use wheat noodles, so they are clearer and chewier than noodles in many other localities. In particular, when these noodles are combined with vegetarian broth, cinnamon leaves, bean sprouts, chives, and roasted peanuts, they create a very unique and addictive flavor.

Vegetarian broth is made from vegetables and mushrooms, so it is sweet and light. Many restaurants also add squash, bean curd, and dried straw mushrooms to the broth, not only to increase the sweetness but also to create a very pleasant aroma, creating a unique flavor for the dishes.
In particular, Tay Ninh people rarely use processed vegetarian foods. The most popular topping is tofu (fried or white). Also pre-cooked in the broth, the tofu is soft and juicy, customers can order more to dip with chili salt mixed with fried onions, squeezed with lemon, very tasty.
In addition to banh xeo, banh khot, bun cha gio, bun mam..., spring rolls or vegetarian vermicelli skin is a popular snack of the people here. People stir-fry cassava (bean curd), carrots, tofu to make skin, eat with vermicelli, herbs, cucumber... Instead of eating a whole bowl, people will use the dish of skin wrapped in rice paper with herbs or water spinach, dipped in sweet and sour soy sauce or black soy sauce. Perhaps thanks to knowing how to combine ingredients and spices, the spring rolls in Tay Ninh have a very balanced and refreshing flavor, so many people who have eaten it once will always talk about it.
The special thing is that the prices of vegetarian dishes in Tay Ninh are very cheap, averaging around 15,000-30,000 VND. A local even took me to eat banh canh in a small alley near Long Hoa market, which costs only 5,000-10,000 VND/bowl.

In January 2022, the art of preparing vegetarian dishes in Tay Ninh was recognized by the Ministry of Culture, Sports and Tourism as a National Intangible Cultural Heritage.
