Processing dried pineapple: A new direction for Kon Loc 1 villagers

(GLO)- Dried pineapple is a product made from the eyeless pineapple tree, a typical product of the Bahnar people in Kon Loc 1 village, Dak Rong commune, Kbang district. Processing dried pineapple is a potential direction to help farmers increase their income, while opening up opportunities for local agricultural products to reach the market.

People in Kon Loc 1 village often grow eyeless pineapples in mixed, dry, rocky gardens. This type of pineapple has a thin skin, small core, is juicy, and has a delicious flavor. Each fruit weighs about 2-2.5 kg. Currently, Kon Loc 1 village has about 16 households growing eyeless pineapples on an area of ​​over 5 hectares. However, when the pineapples are ripe, people often sell them to traders at unstable prices. At times, pineapples cost only 3-4 thousand VND/kg.

To help people increase their income, in 2024, Dak Rong Commune People's Committee coordinated with the Department of Agriculture and Rural Development of Kbang district and the Department of Science and Technology (KH-CN) to implement the processing of pineapple products, and at the same time support the design of packaging, labels, and build the brand "Dried Pineapple".

Accordingly, after establishing the Kon Loc 1 Village Eyeless Pineapple Production and Consumption Cooperative, people have focused on growing pineapples organically to provide raw materials for processing dried pineapple. By applying the freeze-drying method, the product can be preserved for a long time and retain 100% of its nutritional value.

Mr. Dinh Van Pin - Head of the Cooperative Group - said: "Previously, people often sold pineapples to traders at unstable prices. Currently, deep processing of dried pineapple products has helped people increase their income. After being dried, pineapples will be sold at a higher price (about 70 thousand VND/kg). More than 3 kg of fresh pineapple will yield 1 kg of dried pineapple. Thus, this direction promises to help the village's pineapple trees become more and more valuable."

As a grower of eyeless pineapple for many years, Mr. Dinh Van Tinh commented: The eyeless pineapple variety has low investment costs and is easy to grow. However, the disadvantage is that the preservation time is short because the fruit is juicy and easily bruised when ripe. Since implementing the processing into dried pineapple products, the damage has been overcome. We are very excited and hope that the dried pineapple product will be favored by the market.

After 6 months of proper care, the people of Kon Loc 1 village harvested the pineapples, washed them, pre-processed them, peeled them and sliced ​​them. Then, with the support of the Provincial Center for Application of Science and Technology Advances, the people put them in a freeze dryer. The pineapple slices were freeze-dried for more than 20 hours, gradually concentrating the nutrients. When the pineapple slices were drained of all the water and microorganisms, they were canned. The dried pineapple slices were no longer as juicy as fresh pineapples, but when eaten, they had a full range of slightly sour and sweet flavors.

Mr. Truong Huu Phuoc - Officer in charge of agriculture in Dak Rong commune - said: "Previously, pineapples were bought by traders at quite cheap prices. People were also forced to sell quickly because this fruit spoils very quickly. Now, pineapple growers are assured because the output is guaranteed."

According to Deputy Director of the Provincial Center for Application of Science and Technology Advances Vo Thi Thuy Ngan: Dried pineapple is a model under the National Target Program for socio-economic development in ethnic minority and mountainous areas.

Consulting and supporting the dried pineapple processing model for the people of Kon Loc 1 village aims to promote the process of economic restructuring towards increasing the proportion of goods and services in particularly difficult communes; promote the process of starting a business among ethnic minorities based on the potential, strengths and available resources in the locality; create jobs and stable income combined with preserving and promoting the cultural values ​​and traditional knowledge of ethnic minority communities.

“We have supported research and testing of dried pineapple products; supported packaging design, labeling, advertising, and product branding. At the same time, we have provided training to improve the level of technology and production techniques at the site for the people of Kon Loc 1 village.

After completing the training course, they will become the “nucleus” in propagating and mobilizing local people to change their thinking and working methods to develop the product together. Currently, dried pineapple products have been tested to meet standards and have anti-counterfeit stamps, using QR Code to encode information about the product, growing area, etc.

The application of the traceability system is considered a necessary direction to clarify the origin and identify the value of the product, contributing to protecting the brand of "Dried Pineapple" in the market" - Deputy Director of the Center for Application of Science and Technology Advances of the province informed.
