NU DO - Michelin star Quang noodles.

NU DO Quang noodle restaurant located in Da Nang city, has just been included in the list of Michelin-starred dining establishments.

Delicious food from the story

Still using rice flour as the main ingredient, NU DO noodles retain the original flavor of the homeland through white, soft, and chewy noodles. To enhance the flavor and difference, NU DO noodles were researched and modified by Tuyet Pham based on her grandparents' culinary experience as well as variations from the tastes of a young person. And NU DO therefore converges all the elements of delicious food, hometown stories and health criteria.

Eating delicious noodles is not just about the taste buds. The story of freshly roasted peanuts, yellow turmeric, and white sieves is filled with amazement at the secrets that create regional cuisine.

In particular, the story of Tuyet Pham's inspiring entrepreneurial journey is the final flavor that contributes to making the experience of NU DO noodles more complete. The process of creating a bowl of NU DO noodles is also Tuyet Pham's journey to recreate her childhood, to leave, to experience and to grow up.

Tuyet Pham grew up from the MasterChef competition – a culinary competition that has been internationally recognized for its professionalism. However, she herself is a native of Quang Nam, growing up from her mother’s simple noodle stall.

On the journey to create NU DO, Tuyet Pham carried out two tasks in parallel: going outward and returning inward. Tuyet Pham's path to the outside also crossed many mistakes and misconceptions.

Sometimes Tuyet is like a child happily grabbing a gift from someone else, sometimes like a young person eager to explore new horizons without fully understanding the guide. Putting aside theory, Tuyet is now more calm with what comes and goes.

Along with the work of a businessman, looking outward, the journey towards the inside is equally arduous. When NU DO was just conceived - it was also the journey of the little girl Tuyet who was looking for herself in the world after childhood.

After 2 years, especially after COVID, it was a journey to find simplicity. Now after 5 years, NU DO stands firmly on its own two feet and the plan for NU DO 2 is about to open.

Michelin star for Quang noodles

NU DO's luggage at this time is extremely light. The experience and knowledge about Quang noodles that Tuyet has accumulated has transformed into daily details and experiences.

“I want to bring the flavor of NU DO not only as food but also as experience, emotional experience. Customers come to NU DO with stories and return to NU DO with emotions and flavors.

That is why Tuyet positions her customers as people with experience, who have a role in society and they come to NU DO flavor to satisfy their taste, then they continue their work more creatively. When using a branded product, customers also affirm their brand", Tuyet Pham shared.

NU DO is a brand that creates emotions, but behind it, there is a lot of reason, effort and perseverance. The emotion that is tempered through reason is the most complete emotion, the most worth trying.
The biggest gift for Tuyet Pham and her colleagues is the Michelin award that came at the same time as the 5th anniversary of NU DO's establishment.

Michelin stars have gone beyond the function of an award and become a reliable standard to evaluate the quality of restaurants and the skills of chefs. Achieving Michelin stars is difficult and keeping Michelin stars is even more difficult. With this award, Tuyet Pham believes in herself and the path she is taking even more.

Currently, Tuyet Pham has launched a jar of sauce with the flavor of NU DO. The next step is to research the production process to put it into mass production so that the flavor of NU DO can connect more widely to Vietnamese family kitchens, Vietnamese people abroad and foreigners who love Vietnamese cuisine. Tuyet Pham's further goal is to connect to farms and call for investors to expand the scale of NU DO.
