Sour meat is a traditional dish of the Muong people during holidays, Tet and whenever the family welcomes distinguished guests. With typical ingredients and spices, sour meat production facilities in Vu Binh commune, Lac Son district bring diners a dish with a unique flavor, imbued with the tradition of the Muong Vang people.

Sour meat products of Lam Tin sour meat production facility, Lam Hoa 2 street, Vu Binh commune (Lac Son) are favored by the market, carrying the typical flavor of Muong Vang homeland.

As the first sour meat production business in Vu Binh commune to be recognized as a 3-star OCOP standard product, Lam Tin sour meat of Mrs. Bui Thi Tin's household, Lam Hoa 2 street, is highly appreciated by consumers for its fatty taste, light sour taste of fermented pork, the rich taste of corn bran, the aroma of Doi seeds creating a rich, delicious flavor that is hard to mistake when enjoying. Currently, Lam Tin sour meat products have built a brand, providing a source of goods in the province and neighboring areas, with 2 types of sour meat: fruit sour meat and canned sour meat. On average, each month, Mrs. Tin's family's facility supplies over 3,500 products to the market.

Ms. Bui Thi Tin, owner of Lam Tin sour meat production facility, shared: "In the past, sour meat was processed by our grandparents under the name of sour salted meat to preserve it for longer. Although it is a traditional, unique and convenient dish, sour meat is only popular in Lac Son area. That always makes me wonder why a dish with strong Muong ethnic identity is not widely spread. From that, my husband and I have nurtured the idea of ​​preserving the sour meat making profession to promote and introduce the product, and at the same time connect and expand the market outside the district. Up to now, my husband and I have had nearly 10 years of producing and processing sour meat to supply the market in the province and neighboring provinces."

Along with traditional sour meat production facilities, Tuan Linh sour meat production household in Lam Hoa 1 street has gradually emerged as one of the quality and reputable sour meat production facilities. Starting to develop the factory since 2022, the facility currently produces about 1,000 products per day to supply to the markets of provinces and cities such as Hanoi, Hai Phong, Phu Tho ..., with 2 prices: 35,000 VND/fruit and 70,000 VND/box. The facility creates jobs for 9 local workers, with an income of 5 million VND/person/month. With a sharp mind, Tuan Linh sour meat production household has promoted and introduced sour meat products on social networking platforms Facebook, Zalo ... to expand the consumption market.

In Vu Binh commune, there are currently nearly 10 households producing sour meat, of which 2-3 are factory-scale production facilities that meet the prescribed standards. Locally produced sour meat products are sold at OCOP product stores and introduced to stores and agents in the district and neighboring provinces. With the combination of pork, corn bran and Doi seeds with garlic, the sour meat of the Muong Vang Lac Son people has a distinctive, rich flavor. The aroma of Doi seeds with a slightly spicy taste and essential oils makes Lac Son sour meat unique. To make sour meat that is both fragrant, sweet and rich, the processing steps are carefully done, from choosing clean ingredients, ensuring food safety to preliminary processing and marinating the meat. The meat is cut into small pieces, marinated with spices that are absorbed evenly into each piece of meat, using corn bran to create a fragrant, rich flavor for the product. Inheriting traditional methods and creativity, production and business households have created sour meat products with Doi seed flavor and sour meat with garlic flavor to meet consumer demand.

In the coming time, the local Party Committee and government will continue to pay attention and support businesses to develop and expand production scale. Strengthen the work of promoting and introducing products and expanding the market to link product consumption. With efforts to preserve and conserve traditional dishes, we hope to bring Lac Son sour meat products to continue to reach far and wide.
