Special appeal

Located at 63 Le Hong Phong Street, Ba Phien fish noodle shop (also known as Ba Thua) is one of the oldest restaurants in Da Nang. Ms. Ho Thi Thu (59 years old, owner) said that the shop was established in the 1970s of the last century, passed down from her mother with the "brand" Ba Phien and has existed until now for nearly 55 years.

The noodle shop has long been a favorite destination for locals as well as diners from near and far when visiting Da Nang. Diners will always remember the taste of the broth, which is always carefully prepared from the selection of ingredients to the cooking process to achieve the result of a clear pot of water, always with the aroma of vegetables and fruits. The highlight of the pot of water is a bit of shrimp paste, which is an indispensable spice in the culinary culture of the coastal region. The shop also sells a full range of fresh seafood, typical of the coastal region such as mackerel and tuna vermicelli, crab cakes, shrimp cakes...

To enhance the flavor of the fish noodle soup, diners will eat it with a plate of raw vegetables with typical tropical vegetables such as bean sprouts, lettuce, basil, banana shoots, all contributing to giving users and diners a "memorable" bowl of noodles. Located on this decades-old Le Hong Phong street, there are also other famous restaurants such as Ba Hoa fish noodle soup, 61B Le Hong Phong fish noodle soup, contributing to creating a unique culinary street with its own flavor.

When mentioning long-standing restaurants with the typical flavors of Da Nang cuisine, it would be a mistake not to know about Ba Vi Quang noodles restaurant, which is 45 years old and located on Le Dinh Duong street. For those who are originally from Quang, they have probably visited to enjoy this traditional culinary flavor. Ba Vi Quang noodles always attract diners with its pot of thick filling cooked from chicken eggs, duck eggs, quail eggs, chicken, beef, pork ribs, etc. Accompanying it is a plate of fried spring rolls that are golden brown. And of course, there will be an indispensable plate of eye-catching raw vegetables with many kinds of herbs.

For many people, traditional restaurants with long-standing characteristics always have a special appeal not only because of the flavors that have endured over the years but also because of the deep feelings when they wholeheartedly turn to their homeland. Restaurants such as Mrs. Phien's Bun Cha restaurant or Mrs. Vi's Quang noodles restaurant, although having existed for decades, are always in the hearts of Da Nang people and are often introduced to international friends near and far when they come to visit and enjoy this city.

Ms. Tran Thi Thu Huyen (25 years old, Ngu Hanh Son district) confided that traditional dishes sold at long-standing restaurants always bring different feelings to her as a way to preserve and maintain the traditional culture of her homeland and clan.

From identity to modernity

According to research on the relationship between cuisine and culture as well as human personality, specifically Quang personality, for a long time, eating and drinking or cuisine has been a necessary and indispensable need of humans to maintain life, increase labor production and develop comprehensively. The journey to discover Da Nang cuisine is also a journey to discover the history, culture and people here.

Each dish carries a story, a unique mark, contributing to the colorful and flavorful culinary picture of Da Nang. Delving into the reality of culinary culture to see that it is a process of transformation from identity to modernity, likened to a multi-colored symphony, a subtle blend between the cultural identity of Quang people in particular, Vietnam in general and the influences from many different cultures.

In that flow of culinary culture, there is also a strong historical mark and diverse cultural exchange, both expressing the liberal and open nature of coastal residents and showing the flexibility in cultural assimilation of a young, vibrant city that is always ready to welcome multinational cultural flows.

This is clearly demonstrated through the appearance and long-term existence of many decades-old Indian, Japanese, French restaurants and most notably, Chinese restaurants. Located at 267 Ong Ich Khiem Street, Cho Lon Restaurant, which has been in Da Nang for nearly 20 years, is one of the largest Chinese restaurants still existing in Da Nang. Mr. Lam Khom (36 years old, owner) said that he inherited this restaurant from his biological mother in the 2000s, and has been attached to Da Nang for nearly 20 years.

Cho Lon restaurant and many other Chinese restaurants in Da Nang are clear evidence of the harmonious combination of Vietnamese and Chinese cuisine, becoming familiar dishes in the culinary life here, thereby bringing diners unique and unforgettable culinary experiences.

Da Nang cuisine today is formed and developed based on the foundation of traditional Vietnamese culinary culture, combining influences from many other cultures such as China, the West, India and Khmer; a harmonious combination of tradition and modernity with a unique and rich menu.

Enjoying Quang cuisine, especially at long-standing restaurants, dozens or even hundreds of years old, people and diners not only enjoy delicious food but also nourish their souls, experience culture and preserve memorable moments. Cuisine has become an indispensable part of the diverse cultural picture of Quang, the pride of the people here and a unique cultural heritage that needs to be preserved and promoted.
