According to Mr. Nguyen Dinh Chung (51 years old, owner), he was taught the profession by his parents. He does not remember exactly how many years his family has been in the profession, but what makes him happy is that up to now, the restaurant still maintains its "form" in terms of customer service ability and its own unique flavor. Although his restaurant is very old, located in a corner of the street, many diners from far away still remember it.
According to Mr. Chung, the first thing to keep the standard flavor of this dish is that all ingredients must be fresh. The carp and snakehead fish must not be industrially fed. After cleaning, the fish is boiled, the bones are removed and the meat is divided into two parts, one half for stir-frying, the other half for frying.
Mr. Chung stewed the fish bones with the bones, then added spices to make the broth. The unique thing about mixed fish noodles is the golden color of the broth. Therefore, the way to prepare this broth is also very unique.
To fry fish, Mr. Chung does not use normal cooking oil. Before frying, he simmers cooking oil with cashew nuts to create a caramel sauce with color and aroma. Then, he uses this caramel sauce to stir-fry the fish.
“That is also the symbolic color of Thai Binh fish noodle soup that cannot be found anywhere else. A rich broth, with the aroma of annatto oil and the rich taste of fish. For fried fish, the fish meat is marinated with pepper and fresh turmeric juice, then placed on a charcoal grill. Grill until cooked and then deep-fry until golden brown,” said Mr. Chung.
To make the bowl of noodles more attractive and delicious, the restaurant always has water spinach or mustard greens served with it. Depending on the season, there will be different types of vegetables, but before being put into the bowl of fish noodles, the vegetables are stir-fried with garlic. When eating, diners can add some herbs, lemon and chili to taste to increase the attractiveness.
A bowl of vermicelli with shimmering golden broth underneath, rich in flavor, topped with fish and some eye-catching green vegetables makes diners praise it. That is why for many years, Ms. Oanh's fish vermicelli restaurant has maintained its reputation, with more than 1,000 customers on busy days and 800-900 customers on quiet days.
Here, they serve two types of fish for everyone to choose from, fried fish or braised fish, or diners can also order both to increase the appeal and novelty of the dish.
