Stopping to stack bamboo trays to dry spring roll leaves, Mr. Le Trung Phuc (42 years old, living in Binh village, Thach Hung ward) said that his family has been making spring roll rice paper for more than 20 years. To produce rice paper, the indispensable ingredients include rice, sugar and salt. Every night, people soak rice in water for a certain amount of time, then take the rice out and squeeze it thoroughly to grind it into flour. After grinding the rice flour, mix it with salt and let it ferment. In the morning, people mix the rice flour with water, add sugar and mix well to make the rice paper. According to Mr. Phuc, his family has not invested in modern machinery, so the production of cakes depends on the weather. In October 2021, the People's Committee of Ha Tinh province issued a decision to recognize and promulgate a plan to preserve and develop the traditional rice paper craft village of Binh village, Thach Hung. Up to now, the whole ward has more than 120 households producing rice paper, mainly concentrated in Binh village. The rice paper making profession is creating jobs for more than 200 local workers. Revenue from rice paper production in the whole ward is estimated at more than 31 billion VND/year.
