Vegetarianism is a diet that does not use animal meat. Currently, there are two popular forms: regular vegetarianism and veganism. Regular vegetarianism does not eat animal meat, but does eat eggs and other products of animal origin such as butter, milk, honey. Veganism does not eat animal meat and any products containing the above ingredients. Many people will think that vegetarianism will not fully meet the body's nutritional needs due to the lack of protein from meat and will quickly feel hungry. In fact, many studies show that many types of plants such as soybeans, lentils, green beans, etc. contain higher protein content than red meats such as beef, pork, etc. Therefore, if vegetarianism is reasonable, scientific and follows nutritional principles, it will meet the needs of the elderly, children, people with little physical activity, and professional athletes. Many people have created and prepared many new ways of eating, calculating in detail the food portions to create richness, attractiveness and ensure nutrition for each meal. Ms. Pham Thi Trang, 37 years old, in Nam Dinh city, has maintained a vegetarian habit for about 3 years now, sharing: “After learning and realizing the benefits of vegetarianism, I have chosen to be a vegetarian for 3 years now. On occasions of festivals and meetings with colleagues and friends, I still eat meat, but on normal days I am completely vegetarian. My vegetarian diet focuses on fresh vegetables, fruits and nuts, vermicelli, pho, brown rice. In addition, I will prepare vegetarian spring rolls, mushroom floss, salads with vegetarian dipping sauce made from mushrooms, beans, peas... to create diversity for the meal. Since following a vegetarian diet, I have always maintained a cheerful and healthy spirit.” Ms. Vu Thi Thuy, also from Nam Dinh city, has been a vegetarian for 4 years and shared: “When I first started a vegetarian diet, it took my body some time to get used to and adapt to the new diet. To make my vegetarian diet long-term and effective, I equipped myself with complete and scientific knowledge about vegan nutrition through reading books, reading documents on the internet, participating in vegetarian forums and groups on social networks, and learning to cook vegetarian dishes to diversify my daily menu. My children also quite like vegetarian dishes, and sometimes they eat with me. Since I started a vegetarian diet, I feel lighter, healthier, and my skin is more beautiful.”
In the hustle and bustle of life, many people like to invite each other to vegetarian restaurants to find moments of peace and relaxation, or to prepare nutritious, cozy vegetarian dishes at home to enjoy with friends and relatives. Grasping the current vegetarian trend, many restaurants and businesses have also switched to vegetarian food and have attracted a certain group of customers. In Nam Dinh city, there are a number of famous vegetarian restaurants such as: An Lac Tam, Hoa Lien, Huong Van Chay... Vegetarian dishes have been prepared according to many different tastes. Still from the ingredients of vegetables, beans, peanuts, mushrooms... but through the hands of the chef, the dishes have become different. There are no specific figures on the number of vegetarians in the province today, however, looking at the number of vegetarian restaurants and eateries opened along with the demand for vegetarian food, it is clear that the number of vegetarians has gradually increased. Regardless of gender or age, they seek vegetarian dishes as a way to change their taste, to ensure their health and to wish for a better life. Ms. Nguyen Thu Trang, owner of a vegetarian food store in Nam Dinh city, said: “Vegetarian customers are very diverse, not only older customers but also the number of young customers coming to eat vegetarian food is increasing day by day. The vegetarian menu of the store is also very rich, all made from fresh, delicious plants, ensuring quality. Dishes that are loved by many diners include: Vegetarian vermicelli soup, mushroom porridge, mixed rice paper... In addition, our store also accepts to cook vegetarian dishes for customers in need”. Ms. Tran Thi Nguyet in Nam Dinh city, who specializes in cooking vegetarian dishes, said that from the number of dishes cooked, it can be seen that the number of people eating vegetarian is increasing day by day. Vegetarian dishes are also increasingly diverse and rich. There are times when she has to mobilize her whole family to help cook vegetarian dishes to serve customers.
Along with health benefits, vegetarianism is also one of the most practical and easy solutions to protect the environment, protect animals, form a green lifestyle, and contribute to minimizing the negative impacts of the livestock industry on the living environment. Therefore, vegetarianism is becoming more and more popular. However, to maximize the effectiveness of vegetarianism, each person needs to choose for themselves the right, scientific vegetarian method, suitable for the body's needs to ensure health, not just see this as a popular trend.
