Customer agrees to wait 1 hour

In the last months of the year, the grilled meat dumpling shop on Nguyen Van Nghi Street (Go Vap District, Ho Chi Minh City) is crowded with people... queuing. Inside, a few plastic tables and chairs are already full of people. The shop opens from 5pm to 10pm, but as soon as it opens, there are customers waiting to buy.

Quickly grilling dozens of skewers of meat on a hot charcoal stove, the owner Thanh Tuyen (26 years old) regretfully and continuously informed new customers: "I'm out of tables, please wait a moment!".

At this point, the guests happily nodded. Ms. Tuyen said that many guests even agreed to wait up to 1 hour to eat grilled meat buns.

"The busiest time is from October to the end of the year and a few months after Tet, especially during the cold seasons. However, during the rainy months, the restaurant is still deserted," she said.

According to the owner, her restaurant is famous for its cheese-wrapped buns and grilled skewers. The buns at Tuyen's restaurant are especially special because they have added cheese, which she makes at home and sells.

The grilled meat is also marinated with a "special" sauce by her family. When grilled, it will have a faint aroma, and when eaten, you will feel the moderate salty and sweet flavors, blended together. The meat is pork belly, carefully selected by Ms. Tuyen. The meat is not too thick or thin, when grilled, it will have the right size, and you will not feel bored when eating.

Not only that, Ms. Tuyen's restaurant is always crowded with customers not only because of the delicious food, but also because the staff always have a smile on their face despite being busy with work.

With the price of 12,000 VND/skewer, 8,000 VND/bun, she can sell 800-1,000 skewers and about 1,000 buns per day. Revenue can be more than 16 million VND/day.

Regarding the price, Ms. Tuyen shared that because most of the customers are students, the price is affordable, suitable for their budget, helping the restaurant retain many regular customers.

"Because I use good ingredients and sell them at low prices, I mainly make a profit from labor. Each profit is very small, but thanks to your support, the number of sales is large," said Ms. Tuyen.

A regular customer of the grilled skewer shop, Gia Nghi (22 years old, living in Go Vap district) shared that she often comes here to eat because she likes the moderate sweetness of the meat.

"When eaten with vegetables and chili, you can feel the rich marinade, making the meat fragrant and sweet. Here, there are also cheese dumplings, so eating with meat will not be boring and the price is cheap," Nghi said.

The boss is passionate about starting a business, only sleeping 4 hours a day.

Previously, Ms. Tuyen had tried her hand at starting a business selling many different products. Three years ago, she accidentally ate grilled meat skewers at Ho Thi Ky food market (District 10) and was very impressed. From then on, she decided to start a business selling this dish because there were very few sellers in her area, and if she wanted to eat it, she had to go quite far into the city center.

"When I first opened, there were no customers, and the road was under construction, so I had to sell and stop selling at the same time. Not only that, the Covid-19 outbreak forced me to stop selling for a while," Tuyen confided.

Not long after, after just 1 month of reopening, many customers came to support Ms. Tuyen's restaurant thanks to the image of her grilled skewers posted on social networks.

With the momentum, her family also joined in, going to the restaurant to help Ms. Tuyen serve customers. At the restaurant, there were 5 people serving, and at home, there were 5 more people working to prepare food.

Every day, Ms. Tuyen works straight from afternoon until dawn the next day. To the point that she can only sleep 4 hours a day to have enough energy to sell at night.

"Selling this makes little profit but is very hard. Because I sell at a low price, use good ingredients and make it myself, it takes a lot of time. No matter how many customers there are, I can only make 1,000 dumplings a day," said the female owner.

Since receiving support from many people, Ms. Tuyen shared that she feels very grateful and happy when her food stall develops.

"Starting a business requires hard work and perseverance. For me, this job is not difficult, as long as I try hard every day, I will succeed," Ms. Tuyen said with determination.
