On the evening of November 29, the Hanoi Food Culture Festival 2024 and the Ceremony to announce the Decision to register "Pho Hanoi" as a National Intangible Cultural Heritage officially opened at Thong Nhat Park, Tran Nhan Tong Street, Hai Ba Trung District, Hanoi.

The Hanoi Culinary Culture Festival with the theme "Hanoi connects five continents" aims to honor, preserve and promote the traditional cultural and culinary values ​​of the capital Hanoi, build and effectively exploit the cultural and culinary brand through developing a quintessential, unique and quality culture and cuisine. The festival also introduces and promotes the image of Hanoi as a unique tourist, cultural and culinary destination; is an opportunity for the capital Hanoi and embassies of countries, localities, organizations and individuals to meet, exchange and display and promote products.

"The 4th Hanoi Food Culture Festival in 2024 has the participation of 16 embassies of countries: Algeria, Argentina, Azerbaijan, Brazil, India, Iran, Japan, Mongolia, Laos, Russian Federation, Sri Lanka, Turkey, Korea, France, Italy, Venezela. The festival also has the participation of 8 neighboring provinces: Ha Giang, Son La, Lang Son, Hung Yen, Bac Ninh, Khanh Hoa, Thanh Hoa, Quang Binh with a scale of more than 80 booths.

Through the festival, organizations, individuals and artisans have the opportunity to meet, exchange, promote products and experience the unique culinary culture of countries, territories, provinces and cities.

Locals and tourists can immerse themselves in many folk games, enjoy traditional and modern cultural and artistic performances performed by Vietnamese and international artists. Visitors can also exchange and share knowledge and secrets with famous artisans and chefs who have "breathed life" into ingredients and food to turn them into unique culinary works of art, imbued with national identity.

In particular, the Hanoi Food Culture Festival 2024 will feature the program "Pho So Ha Thanh" - a unique creation combining traditional cuisine and technology. The digital pho experience space with smart robots brings advanced and modern pho processing methods, applying precise technology and consistent flavor, creating an experience that is both modern and close to tradition. Thereby, traditional pho is not only preserved but also developed, spread strongly in the digital technology era and is a creative product of Hanoi in the cultural industry.

This is a unique creation combining traditional cuisine and technology in preserving and developing the essence of pho. People and tourists will enjoy traditional pho prepared and served by smart robots, and at the same time visit technology applications and digital transformation in pho processing.

Experience Pho So at the Festival

What's special is that the chef standing in the kitchen is a smart robot that can take care of every step to complete a bowl of pho, such as blanching the noodles, blanching the meat, adding vegetables, pouring the broth...

To enjoy Pho So, diners will use their smartphones to scan the QR code at the cashier counter to order, pay and receive a table number.

According to the automatic order, the processing robot will immediately execute the order following the sequential steps like professional chefs at normal pho restaurants.

These smart robots will replace humans in some stages, creating a pho culinary experience that can spread more widely to everyone, across regions. The average time for a robot to complete a bowl of pho is about 3 minutes for all stages.

In addition, robots also need human support in some stages such as dividing pho noodles, dividing meat, vegetables... into small bowls and placing them in precise positions. Robots will be responsible for selecting each ingredient to complete a bowl of pho. After processing, pho is given to the serving robot to move to the table to receive orders. Each time, this robot will serve an order for one table.

Coming with her family to experience Pho So booth, Ms. Tran Hoai Anh, Bach Mai, Hanoi said that Pho is a familiar dish of Hanoians in particular and Vietnamese people in general. But this is the first time she and her family have experienced Pho, especially Pho So at the Hanoi Food Festival. Her children are very excited about the robot serving Pho. "This innovation in promoting Hanoi's culinary culture is really impressive, thereby spreading to many people about Pho in particular and the capital's culinary culture in general" - Ms. Tran Hoai Anh shared.

Coming to the festival, visitors can also experience the typical culinary culture of traditional craft villages and performances by artisans recreating the space imbued with the typical culinary heritage of Hanoi such as: Ho Tay shrimp cakes, Phu Do vermicelli, Uoc Le ham, Lang Vong green rice flakes, Me Tri green rice flakes, sticky rice, Phu Thuong sweet soup, Tranh Khuc banh chung, Phung spring rolls, Ganh Quan sticky rice cakes, Phu Nhi rice cakes, Quang Phu Cau porridge, Ha Mo se porridge, So village vermicelli...

In addition to the main activities, the festival also has activities to introduce, promote, discuss, and demonstrate traditional cuisine and heritage. Accordingly, there are many spaces for visitors to experience such as: Photo exhibition area introducing works of art promoting culture, tourism, and typical domestic and international cuisine.
