"Tomorrow morning, you must definitely eat Trang Kim pho. This dish is very special, guaranteed to be unique, only available here" - before saying goodbye to our group after a chance meeting at the first stop on the journey to explore Ha Giang, Ms. Mai Lan (who has lived and worked in Quan Ba - Ha Giang for nearly 40 years) kept reminding us.
At first, when we heard about Pho, not many people in the group were excited because in the previous 2 days in Hanoi, we had eaten Pho for 2 days. However, after asking the locals and the drivers who knew the way as well as consulting suggestions on Google, the final answer was still: When you come to Quan Ba, you must eat Pho Trang Kim!
At 7am, we left the homestay at the end of Nam Dam village, Quan Ba commune, and headed straight to Dong Van Stone Plateau. It took us less than 10 minutes to reach Trang Kim village, Quyet Tien commune, where along both sides of the main road were countless signs of "Trang Kim Chicken Pho" close together. Following Mai Lan's recommendation, we stopped at a pho restaurant called Quang Huy.
As soon as we entered the door, we were struck by the pink and opaque white pho noodles drying in rows right above our heads. According to Ms. Mai Lan, this is also the characteristic of this pho dish.
Pho Trang Kim is handmade at every stage. The rice flour is ground, hand-rolled into large pieces, then spread out to dry, and cut into noodles when a customer is ready. We jokingly call it "wind-dried" pho, only available in Ha Giang.
When a customer orders, the owner will take the pho noodle down, cut it into strands, and then dip it into the boiling broth. Thanks to that, the pho noodles can be adjusted according to the customer's preference, the important thing is to still maintain the toughness and thickness of the noodles.
Thanks to being handmade right on the spot, Trang Kim pho noodles are completely different from other types of pho. The color, flavor and toughness are all original, making the dish more delicious and unique. Ms. Thanh Xuan (from Ho Chi Minh City), despite having just had 3 consecutive pho meals in Hanoi, still nodded and exclaimed while eating: "This pho noodle is really strange, it still has the original aroma of rice, very fragrant, very unique taste!".
According to locals, in the past, Trang Kim pho was only available in one location, a small village nestled along the Lo River in Quyet Tien Commune. This peaceful village is famous for its unique and sophisticated way of preparing pho, which originated as a breakfast dish for market-goers. Tourists could only enjoy Trang Kim pho at the Trang Kim market every Thursday. Over time, this dish became more and more famous and many people opened shops to sell to tourists along the main road.
