Janet Clarkson, author of "Soup: A Global History," says soup is one of the oldest and most popular foods in the world.
“Every cuisine has some form of soup. It has very ancient roots,” she writes in the book, noting that early humans boiled it in everything from tortoise shells to long bamboo strips, all the way up to the invention of metal soup pots in the Bronze Age.

Lanzhou Beef Noodle Soup, China
Forming – or pulling – the la mian noodles by hand for this traditional soup is an art in itself. Craftsmen use high-gluten wheat flour and finely milled alkaline flour to create a pliable dough, then stretch and fold each piece of dough to make enough noodles for a bowl of soup. The dish consists of a beef broth with tender beef, light radish slices, chili oil and fresh herbs.
Mohinga, Myanmar
Soup is a breakfast staple in much of Myanmar, where street vendors and teahouses sell steaming bowls of mohinga from giant vats. The soul of this noodle dish is the fragrant broth simmered with herbs and flavored with roasted rice flour.
Soto ayam, Indonesia
Chicken noodle soup can reach culinary heights in this delicious Indonesian dish. Spices like fresh turmeric, star anise, cinnamon, lemongrass and kaffir lime leaves combine to create a rich aroma and flavor, with soft-boiled egg yolks adding a rich kick.
Tom yum goong, Thailand
Sweet, sour, spicy and salty, tom yum goong's wonderful broth is the perfect base for the sweet and tender prawns. Fragrant ingredients include galangal, lemongrass and kaffir lime leaves, while bright red bird's eye chili flakes add a spicy kick. Tonkotsu ramen, Japan
Long-simmered pork bones give this classic ramen its rich, marrow-rich broth. It is a signature dish of Fukuoka Prefecture on the southern island of Kyushu, but is now served in ramen shops across the country and the world.

The broth is simmered for hours with cinnamon, star anise and other warming spices to create the perfect aroma for this famous pho dish.
Pho is one of the most well-known Vietnamese dishes in the world.
While pho restaurants today serve many different flavors, beef remains the original. By the 1930s, pho was served with slices of fresh beef gently cooked in broth.
