Green Market in Khanh Thien Commune (Yen Khanh-Ninh Binh) has a history of nearly 200 years, not only being a place for local people and neighboring areas to exchange and buy and sell goods, but also a unique traditional culinary culture that cannot be found anywhere else.

Every morning, the Green Market is always an attractive destination for both locals and tourists thanks to its diverse food stalls. Cakes made from rice - a typical agricultural product - are the outstanding dishes at the market.

From early morning, the owners of banh khoai and banh cuon shops are busy with their work.

Here, one can find all kinds of cakes such as rice paper, rice cake, sticky rice cake, fried cake, sticky rice cake, square rice cake, sweet cake... What is special is that each of these cakes not only has a strong traditional flavor but also contains the quintessence of the cake making profession that has been passed down through many generations of the people of Khanh Thien hometown.

One of the typical products in Khanh Thien is sesame rice paper from Phong An culinary village. Making sesame rice paper is very hard, time-consuming and depends on the weather. The ingredients for making rice paper include non-sticky rice, sesame and salt. Rice paper is made into 2 types, white rice paper and gac rice paper.

Ms. Nguyen Thi Huong has been associated with the rice paper selling profession and the Green Market for more than 40 years.

Ms. Nguyen Thi Huong shared: "Since the craft village was recognized as a traditional craft, we have been very excited. Every day I sell about 100 cakes, and on holidays and Tet I sell more. The income from making rice paper ensures that my family and I have enough to cover our living expenses."

When baking sesame rice paper, it is necessary to bake with charcoal to achieve the ideal flavor and crispiness. This is a rustic, easy-to-eat and affordable gift from the countryside, imbued with traditional culinary culture.

To maintain and sustainably develop the traditional culinary culture of the Green Market, the local government has stepped up propaganda and mobilized people to practice a civilized lifestyle, actively promote the image of the craft village to tourists, aiming to build and effectively implement a project to develop community tourism in the locality...

Countryside markets are not only familiar with goods but also create closeness and intimacy between people.

People happily went home after buying food for their families.
