Pho cuon first appeared on Ngu Xa street, Nguyen Khac Hieu, Hanoi by chance. The pho restaurant opened at night and one time a customer came to the restaurant late to eat pho, the pho broth was gone and there were only a few noodles left so the owner came up with a way to thinly spread the pho noodles, let them dry and roll them with stir-fried beef and herbs.

To enhance the flavor, the restaurant owner added a bowl of fish sauce. After the customer finished eating, he kept praising it, and from then on, Hanoi pho cuon was born and became a famous dish, loved by many people.
