Tofu marinated with onions is not only a lifesaver when you are busy, but also a great choice for those who love light, bland flavors. The ingredients are cheap and easy to find, and the way to make tofu marinated with onions is also very simple, but if you master a few small tips, you will be surprised at the difference.

- Tofu: 1 large block (about 300-400gr), choose fresh tofu, smooth surface, not sour.

- Scallions: 1 medium bunch, choose new, fresh onions for the most flavorful flavor.

- Garlic: 2-3 cloves; garlic helps add rich flavor to the dish.

- Chili (depending on preference): 1-2 if you like spicy food.

- Spices: Good fish sauce, sugar, ground pepper, cooking oil.

How to make delicious onion tofu

Step 1: Prepare tofu

Gently rinse the tofu sheets under running water to remove any dirt. Drain the tofu completely; this is important to avoid oil splatters when frying and to ensure the tofu pieces are crispy. You can use paper towels to pat the surface of the tofu dry.

Cut the tofu into bite-sized cubes, about 1-1.5cm thick. This size helps the tofu cook evenly and absorb the seasoning easily.

Step 2: Prepare green onions and other ingredients

Remove the roots and wilted leaves of the green onions, wash them, and cut them into 3-4cm pieces. Peel the garlic and chop it finely. If you use chili, chop it finely too.

Step 3: Fry the tofu

Place the pan on the stove, add enough cooking oil to heat (the amount of oil should be enough to cover about 1/3 of the tofu). When the oil is hot, gently add each piece of tofu and fry over medium heat. Do not use too high a heat because it will cause the tofu to burn quickly on the outside while the inside is not cooked.

Turn the tofu over until golden brown and slightly crispy on the outside.

Remove fried tofu to a plate lined with paper towels to absorb excess oil.

Step 4: Make fish sauce with onion

This is an important step that determines the flavor of the onion-marinated tofu. In a small bowl, add:

- 2 tablespoons good fish sauce

- 1 teaspoon sugar

- 1/2 teaspoon ground pepper.

- Minced chili (if you like spicy food).

Stir well until sugar dissolves, season to taste.

Step 5: Marinate the tofu with onions

Reuse the pan that you used to fry the tofu, drain off some of the cooking oil (leaving only about 1 tablespoon), add minced garlic and saute until fragrant.

Add the chopped green onions and stir quickly over high heat for about 10-15 seconds so that the onions are just cooked while still retaining their bright green color and characteristic aroma. Do not stir-fry the onions for too long because it will make them soft and lose their flavor.

Add the fried tofu to the pan, stir gently so the tofu does not break.

Slowly pour the mixed fish sauce over the tofu, stir gently so that the tofu absorbs the spices evenly. Stir quickly so that the fish sauce thickens and sticks evenly to the tofu, then turn off the stove.

Take the tofu marinated with onions and place it on a plate, sprinkle some ground pepper if you like. This dish is best served hot with white rice. You can serve it with raw vegetables such as lettuce and herbs to add a fresh flavor.

Notes when making onion-marinated tofu

Choose good tofu: Good tofu will be ivory white, smooth, not sour or have a strange smell.

Fry tofu properly: Fry over medium heat and do not fry too much tofu at once to ensure the tofu is evenly golden and does not stick together.

Don't overcook the onions: Green onions need to be just cooked to retain their crunch and characteristic aroma.

Depending on your family's taste, you can adjust the amount of fish sauce and sugar accordingly.
