Dong Tao Commune (Khoai Chau) has long been famous for its specialty Dong Tao chicken - a rare breed of chicken in Vietnam. Realizing the increasing demand of consumers for processed chicken products, Mr. Giang Tuan Vu (born in 1990) in Dong Tao Nam village, Dong Tao commune decided to diversify his products with many ready-made dishes made from Dong Tao chicken.
Born in a rural area famous for Dong Tao chickens, Mr. Vu loved and was attached to this breed of chicken from a young age. When he grew up, he chose to start a business by raising and developing Dong Tao chickens, at its peak he raised about 3,000 chickens.
With a family that produces ham, in 2019, Mr. Vu thought of using Dong Tao chicken to make ham. After many failed experimental productions, he came up with his own recipe to make this product with a delicious, special flavor...
Mr. Vu's Dong Tao chicken ham product is made from the main ingredient of Dong Tao chicken, in addition to pork, spices such as lemon leaves, shiitake mushrooms, fish sauce, pepper... Dong Tao chicken meat to make ham is diced thigh meat and skin, chicken breast is minced with pork and mixed with shiitake mushrooms, chopped lemon leaves, pepper... Ham is wrapped in banana leaves and tied tightly with bamboo strips, steamed for about 60 minutes. Then take it out, let it cool and put it in a vacuum-sealed plastic bag, label it before selling. Chicken ham can be stored and used in the refrigerator for about 15 - 30 days...
According to Mr. Vu, the secret to making delicious chicken ham is that the ingredients must be fresh, especially the rooster must be raised from 9 to 12 months, weighing from 4 to 4.5 kg.
Since its launch on the market, Dong Tao chicken ham has always been popular with customers. Since 2020, Mr. Vu has stopped raising chickens and focused on processing products from Dong Tao chicken. He invested in building a 400m2 production workshop, purchasing processing equipment such as grinders, slicers, chicken turning machines... On average, he produces 1 to 2 quintals of chicken ham per day, and during the Lunar New Year alone, he sells 25 to 30 tons...
Currently, his family's chicken ham is priced from 300,000 to 350,000 VND/kg. In 2022, the product was certified by the Provincial People's Committee as reaching 3-star OCOP. In addition, he also processes a number of other products from Dong Tao chicken such as cartilage patties, sausages, salt and pepper chicken... In order to expand the product consumption market, Mr. Vu actively promotes, introduces, and sells products processed from Dong Tao chicken meat through social networks Facebook, Zalo, TikTok... with the consumption through online channels accounting for 80% of the total production output...
From selling Dong Tao chicken products, Mr. Vu earns over 500 million VND each year.
